Recipe - In Honor of Dr. Seuss: Edible Oobleck!

I'm planning a fun lunch for Tuesday, in honor of Dr. Seuss' birthday.  I've talked about it more over on my reading blog.

We made some cornstarch oobleck today, and I thought it would be fun to make some out of something tasty.  So, I made some jell-o jigglers using yogurt.  They are yummy, but really sweet.  It probably would have been just as good or better using plain yogurt, or using unflavored gelatin instead of the lime I used.  I don't think the girl will complain about it being too sweet.  Below is how I made them.  A little less liquid would probably also be just fine.


Oobleck Jello

1 sm. box lime jell-o
1/2 c boiling water
1 6-oz container lime yogurt (would be good with plain)

Stir the water into the jell-o, then stir in the yogurt.  Pour into a pan that has been sprayed lightly with cooking spray.  (I used my deviled egg plate).

Refrigerate until solidified, and then cut into desired shapes.

Lunch for the Boy: 2.24.10

The Boy is going to our friend's house today, so he's got a lunch. 

He has four pork and leek dumplings, some cheddar cheese, some dried plums, and a couple Hello Panda cookies, along with some craisins & raisins and some homemade cheese crackers.  He's also got a juice.

I'm assuming he'll also have some popcorn with our friend.  It's kind of a ritual.

Daddy's been craving bologna.  I know.  But, a once in a while craving I'll indulge.

He's got a bologna sandwich on a roll, with carrots and some Asian rice crackers.

I've got some pulled pork with bbq sauce on rolls, a juicy jelly, and some yogurt.

Lunch 2.23.10

The girl is off from school this week, and is hanging out with my mother-in-law for most days, but today she is going to play with a good friend of ours.  So, lunch is packed!

She's got pb&j, which she ought to love because I haven't packed them all year at school because of peanut allergies in her classroom, plus they are shaped like butterflies.  She also has some homemade cheese crackers, a couple chocolate filled Hello Panda cookies, apples, a juicy jelly, and a yogurt.  She's got a juice for the day, too, and she'll probably have popcorn with our friend.

I have lunch today, but no picture.

Daddy's got a PB&J, apples, carrots, and homemade cheese crackers.

My lunch is pretty random.  PB&J, apples, mango juicy jelly, a couple girl scout cookies, and a few leftover meatballs from dinner.  Small portions of randomness.. it's just as well I don't have a picture.

Asian Grocery Store Finds: 2.19.10

I went by a local Asian grocery store on Friday afternoon, and snagged some fun items.  I'll blog more about them later, but here's what I got.

Juicy Jelly: Akin to the mini fruit jellies, but bigger, with some coconut chunks, and a really cool reusable container!  (The girl has been warned to be careful with eating them, since they can be a choking hazard)

Hello Panda Cookies: So adorable!  I got chocolate filled and strawberry filled.  Super cute for a small treat, even if they aren't that healthy for you.

Rice Crackers treats: Yum yum yum.  I love these things.  More for Daddy and me, probably, although the girl actually likes them!  The ones with nori wrapped around them are too strong for her, though.

Honey Twists:  I saw these on Asian Aisle (see my blog roll) a while ago, and had to try them.

New frozen dumplings.  They are no longer carrying the brand I used to get, so I am trying these.  Pork & chive and plain pork.  Here's hoping they are as good!

Look for their inclusion in lunches soon!  It's school break week, so lunches will be a little sparse...

I've got a Subway gift card burning a hole in my pocket, so I'll be heading there for lunch.

Daddy has a roast beef and cheese sandwich, apples, some 100-calorie pack (about half of it) graham crackers, and some pretzels.

Lunch: 2.18.10


Snack today is yogurt, some animal crackers, and a juice.

Daddy's Lunch: 2.18.10

As I had hoped, I ended up with free pizza for lunch, so my soup is waiting for me in the fridge at work.

For Daddy, I packed a delicious Four Step Lemon-Thyme Chicken (from Melissa d'Arabian) with sauce in the little container, some glazed carrots (also from Melissa d'Arabian), and some apples.  I put the apples in plastic wrap so that Daddy can take them out when he microwaves the chicken.  It's a really really good recipe and I continue to be impressed with Melissa's recipes!

Daddy has a roast beef and cheese sandwich on whole wheat bread, some pink lady apples, carrots, celery, and some peanut butter for the veggies in the green container.

I have some leftover soup (veggie, bean, kielbasa) and some cheddar skillet bread.  I may not eat it, though, because there is a vendor fair at work, and there may be free food.  I'm always up or free food.

Lunch 2.16.10

The girl was home sick with me today, so she ate some of her lunch and her snack from her box at home, but asked me to put the rest of it in her lunch for tomorrow.

Her snack is two heart shaped chocolate chip pancakes with honey between them, some craisins, and a juice.

Her lunch (refilled from yesterday) is three pizza bites, a couple pretzels, some apple, some carrots with ranch dressing, and a couple girl scout cookies (the new Dulche de Leche flavor.  It's yummy!)

So, I got this super cool new toy:

It's made for cookies, but I saw it and knew I could use it on sandwiches!

I wish I had gotten it before Valentine's Day.. oh, well..  it's the kind of thing the girl will get a kick out of all the time.

Snack for the girl today is Tangerine Tea Jelly sandwiches made with the press, some animal crackers, and juice.

Lunch is three pizza bites, a couple pretzel sticks, a roll up of ham and cheddar cheese, pieces of apple (this time it actually is a pink lady apple, so it shouldn't brown.  I bought the wrong kind of apple last week), carrots with ranch dressing, and a couple leftover jell-o jigglers.

I'm off work today, but I made a lunch for Daddy.

He's got a roast beef and cheddar sandwich on whole wheat bread, pretzel sticks, apple pieces, and carrots with ranch dressing.  I'll talk about the sandwich press I used for his sandwich in the girl's lunch.  Because I'm a geek, I had touse it on Daddy's sandwich, too!

Lunch 2.12.10: Valentine's Party Day!

The girl has a Valentine's party at school today, so I made her a nice Valentine's Lunch!

For snack, she has two heart shaped pomegranate tea jelly sandwiches, some pretzel sticks, raisins & craisins, and a juice, in a heart container.

For lunch, she has some popcorn, a heart shaped egg, some mini graham cracker rounds, some apple slices with hearts cut into them, and some heart shaped sugar-free strawberry jell-o jigglers!  The girl is super excited about the jigglers, so I might have to make it a holiday thing, if she eats them.  Not great, but not terrible, either, and fun.  The apples are pink lady apples, which claim not to brown...  but I think they are browning.

Daddy is getting lunch at work today, so I have lunch just for myself.

In the green container is watermelon, in the round container is apple slices, I have roast beef on a mini whole wheat bagel, carrots, some mini graham cracker rounds, and some smart pop popcorn in the top.

For lunch, Daddy has a mini bagel sandwich with ham & cheese, some popcorn, grapes, some leftover 100-calorie pack graham crackers, and some watermelon.  Hodge podge, but it's leftovers for the most part!

I have some leftover brown rice with mango salsa, a leftover piece of pizza, watermelon, and leftover popcorn from the 100-calorie pack, and some grapes.

Recipe: Black Bean and Cheese Crispy Open-Faced Quesadillas

Last season, on The Next Food Network Star, my favorite Melissa d'Arabian was the winner.  Her new show is $10 Dinners, and I love it!

She made some Black Bean Hummus and Crispy Open-Faced Quesadillas recently, and I thought they looked super.  So, for dinner tonight, I decided to combine the two recipes.  I spread the black bean hummus on top of whole wheat Omega-3 tortillas that I lightly pan toasted, and topped with shredded Mexican cheese.  Then, I broiled them, like Melissa did on her show.

We also topped them with salsa (I used mango salsa.  Mmmmmm.)

The kids loved them.  We loved them.  They were filling.  We folded them in half, and that would make great lunches.  The girl said she wouldn't mind it in her lunch, in her thermos, so it could stay warm.

All in all, a total winner.  Check out Melissa.  She's awesome.

Lunch: 2.8.10 - 100th Day of School!


Snack is a mini whole wheat bagel (bought them, they were half off, and I didn't have time to make them), some pretzel sticks, and a pretzel that looks like two 0's, and a juice.

Lunch is some grapes (0's), some Cheddar popcorn from a 100 calorie pack (did not use the whole pack, because there's a LOT there!), some little round graham crackers (for 0's) , craisins & raisins in the yellow container, some carrot sticks (for 1's), ranch dressing, and a four meatballs (for 0's).
