Lunch: 4.30.13

Family Lunches: 4.29.13

Back to school after a break for the kids (and I was out of town on business for most of the week, so I didn't pack lunches for Daddy and myself either), so back to packing lunches for me!

I've packed family lunches, pretty much the same for all of us, so it's all in one big, happy post.

We have homemade bread (made by The Girl!! - check out pics on my facebook page) with hummus, cheddar cheese, and turkey, on a bed of spinach.

Daddy and I have cantaloupe and orange slices.


The Boy has a Chobani Champions yogurt for snack (not pictured, 9g).  In addition to the sandwich and the spinach, he has cantaloupe and Naturebox cheddar sesame stix.  His sandwich and spinach are 25g, Cheddar Stix are 8g, and his melon is 5g.


The Girl has Chobani Champions for snack (not pictured) In her lunch, she also has orange slices and Naturebox cheddar sesame stix.

Wacky Worldy Waffle Weekend: Morocco

I have a new job which makes Wacky Worldly Waffle Wednesdays really difficult to swing, because I get home later.  SO - The Hubby suggested that I switch it up to Wacky Worldly Waffle WEEKEND! 

It took me a while to get back to it, but here I am.  And the first time back was delicious.

The Girl pointed at the map randomly and we ended up with Morocco.  I decided to base my Moroccan Waffles on the carrot & orange salad from Global Table Adventure's Moroccan menu, with a nod to the "Crater pancakes" that she also did.  They were fantastic, though they didn't taste particularly Moroccan to me.  I didn't have time to do a tagine... so I think it was a win anyhow.

I topped them with honey cinnamon butter with orange slices.  Yum yum yum.

I can totally recommend these waffles.  They are fun for a different take on waffles.


Carrot-Orange Waffles with Honey-Cinnamon Butter

1 1/2 c all-purpose flour
1/4 c semolina flour
3 tsp baking powder
1 Tbsp sugar
2 eggs
1 c packed finely shredded carrots
1 3/4 c dry milk
1/2 c oil
1 tsp cinnamon
zest of one orange
3 Tbsp orange juice (or juice of one orange)

Honey-Cinnamon Butter

4 Tbsp softened butter
3 Tbsp honey
1 tsp cinnamon

Mix together dry ingredients.  Stir in the eggs, carrots, orange zest, cinnamon, and orange juice.

Cook according to your waffle maker's instructions. 

Mix together the softened butter, honey, and cinnamon.  Top the waffles with the butter, and a slice of orange if desired.

For dinner, I made some delicious drumsticks in a Patak's Jalfrezi curry sauce.  It was wonderful.  I served it with couscous, and I mixed the leftovers together.


My lunch is a wrap with the chicken couscous mix, on a tortilla with some chutney on it.  I also have some salad, strawberries, and a clementine.

Daddy has the day off.  Maybe he'll have some of the chicken couscous salad for his own lunch.

I got some black rice at Costco, and I made a whole lot of it with dinner Wednesday night, so I decided to put leftovers in our lunches.

Daddy has black rice, a piece of lebanon bologna, apple slices, cantaloupe, and some mini bell peppers.
