I'm always on the lookout for fun new snacks, and when Somersault Snacks offered to send me a sampler box to try out, I jumped at the chance.
These are great snacks - sunflower seed based, nut free, and nutritious. They are full of protein, low on fat, and high on flavor. One serving has 15g of carbs, which is ideal for a snack for The Boy, who has Type 1 diabetes.
They come in four flavors - Pacific Sea Salt, Dutch Cocoa, Salty Pepper, and Santa Fe Salsa.
Meet my friend, Jamie. As she likes to put it, she is "allergic to life." Guess what she's not allergic to? Somersault snacks! I brought in samples for her to try, and she's a big fan.
The kids love them, too. The Boy said "It's delicious! And full of seeds!" The seeds amused him. The Girl gobbled them up. I really love them, too. They are little nuggets of yum.
Of the four flavors, my favorite (and Jamie's, too) is the Santa Fe Salsa. It isn't overly spicy, just really delicious. The Pacific Sea Salt is also really good, as is the Salty Pepper. The Dutch Cocoa.. not sure how I feel about that one, yet. It's not sweet, really, just seemingly dusted in cocoa. Interesting, for sure, but not my favorite.
Here's the really cool part - Somersault Snacks has offered to send out a sampler box to one of my lucky readers! All you have to do is "like" them on Facebook, and leave a comment here telling me which flavor you most want to try. (They require the FB part for the giveaway) I will pick a winner around 6 PM, Thursday May 26th, using random.org.
As always, I need a way to contact you. Anonymous commenters, with no contact information, cannot win. If I can't contact you, I can't get your information to Somersault Snacks, and you can't get your prize. Simple as that.
One comment per person, please. Winner must get back to me within 48 hours, or I reserve the right to pick a new winner.
Disclaimer: I received a sample pack to review, but have been in no way compensated for this giveaway or by talking about Somersault Snacks. All opinions are my own. The prize is donated by Somersault Snacks.

Recipe - Help Me!: Oatmeal Chocolate No-Bake Cookies
I love eating no bake cookies, but ... would you believe I have never made them before?
They are a little too much like candy... they make me nervous. I don't do so well with candy.
Remember the Crystalized Ginger Incident? Don't know if I posted about that one... my second batch of crystallized ginger, I boiled the sugar a little too long, and destroyed my beautiful Le Creuset Dutch oven. Cracked the enamel. It was a tragedy. I'm gunshy about candy making.
I wanted to give it a try, though. Because I do so love to eat them, and I do so love a challenge. Everyone makes them. They can't be that tough. Right?
Because I bought some almond milk, I decided to try it in them. Here's for hoping!
Oatmeal Chocolate No-Bake Cookies
2 cups sugar
1/2 cup Dutch process cocoa
1 stick butter
1/2 cup almond milk (unsweetened)
1 tsp. vanilla
3 cups old fashioned oats
1/2 cup peanut butter
Combine sugar, cocoa, butter and milk in a saucepan. On medium heat, bring to a boil for one full minute.
Remove from heat. Stir in peanut butter (optional), vanilla and oatmeal.
Drop by spoonful onto wax paper. Let cool for at least 30 minutes.
I ended up putting mine in the freezer for a while... still gooey.
So - HELP! What did I do wrong? I want to make good No-bakes!

Recipe: Butterscotch Chocolate Bird Nests
I got a hankering to make no-bake cookies today.
So I made two kinds.
That's how I roll.
Here's the first kind - not yet sure if the other kind worked, so that recipe is forthcoming.
Butterscotch Chocolate Bird Nests
1 12-oz bag butterscotch baking chips
1 c semisweet chocolate chips
1 3-oz can chow mein noodles
1/2 c fine ground granola (without dried fruit) - optional
Melt baking chips in the microwave or over a double boiler, stirring often.
Stir in chow mein noodles and ground granola, if using.
Scoop into small piles on a cookie sheet
Or, scoop into mini muffin cups.
Put in the freezer or the refrigerator until cooled and solidified. Enjoy.

Of course, stash it on top of your vodka, frozen fruit, and frozen chicken.
If there's a little extra... gobble it up... of course, between strawberries make it good for you, right?

Lunch: 5.16.11
The Girl helped make this one - snack is mini eggo waffles with nutella, and a juice.
Lunch is a fruit salad (her idea) with banana slices, blueberries, and slices of strawberry, a wrap with ham, string cheese, and lettuce on a tortilla, and raisins and dried pineapple.
Recipe: Nutella Cinnamon Rolls (from Sugarcrafter)
Yums
I saw this recipe on Sugarcrafter, and I knew I had to try it - if you want the recipe, go on over to her post. I did it as written, except that I halved the recipe, used half whole wheat flour, and used OJ in my glaze.
Beautiful dough - made in the stand mixer because I was at my parents' house, no bread machine..
Ready to roll.
Nutella + Butter + Cinnamon. Yums.
Baked and glazed
These Nutella Cinnamon rolls were delicious. The Hubby doesn't usually like nutella and he liked them. We had them for dessert, not breakfast, but they would make a lovely breakfast, of course. Slightly sinful, but lovely.
