Recipe: Cream of the Crop Fruit Mini-Muffins

I modified this from a recipe I found at King Arthur Flour. These are not overly sweet, so if you like your muffins on the sweet side, you might either want to add a tad more sugar, some brown sugar, or a little jelly.


Cream of the Crop Fruit Mini-Muffins

1 1/2 c white flour
1 1/2 c wheat flour
1 1/2 Tbsp baking powder
2 tsp nutmeg
1/2 c sugar
1 1/2 c dried fruit (I used a mix that has dried apples in it, along with other fruit)

1/3 c non-fat plain yogurt
1/2 c melted butter
1/4 c unsweetened applesauce
2 eggs

Preheat oven to 350.

Combine wet ingredients and cream in sugar.  Mix dry ingredients and stir into wet ingredients.

Grease or line mini muffin pans, and scoop batter into muffin cups.  (this makes ~72 mini muffins.  Halve the recipe if you want less, but they freeze very well).

Bake for 15-20 minutes or until a toothpick inserted in the center comes out clean.
