Recipe: German Apple Cake

We picked a couple apples from our trees... just a couple.

You are forewarned.  There are apt to be a few apple recipes coming your way for a while.

I made this German Apple Cake (modified from Allrecipes.com) and it was incredible.  I even had a couple bonified visitors from Germany have some at the store I work at (part time) and they approved.

Make this!  The reviews say that it doesn't keep well, turning soggy after the first day.  I can see that.  It wasn't a problem, as customers ate it all up before it was even mid-afternoon.  Yums.  I'll be making this one again.

German Apple Cake

4-5 c apples - peeled, cored and diced
2 eggs
1/4 c melted butter
3/4 c vegetable oil
1 1/2 c sugar
2 tsp cinnamon
2 c all-purpose flour
1 tsp baking soda

Preheat the oven to 350 F.   Combine eggs with butter and oil until well mixed and creamy. 

Add in sugar and cinnamon, and then carefully incorporate flour and baking soda.  Fold in apples with a spatula.  Line a 9"x13" pan with parchment paper.  Pour the batter into the pan and spread evenly with an offset spatula.

Bake for about 45 minutes, or until a skewer inserted in the center comes out clean.  Cool completely before cutting into squares and serving.
