Recipe: Whole Wheat Flax Seed Mini Pitas

I love pita bread, and due to my adoration of all things mini, I decided to try my hand at making some mini pitas.

I think perhaps there was a little too much flax seed.  It was kind of dominant as a flavor.  I might decrease that when I make them again.  And I will be making them again.  I made them with 1 c of flax seed.  I decreased that to 1/2 c in my recipe below.  Feel free to add more if you like.

I did two thicknesses when rolling - half of them, I rolled through my pasta machine on the thickest setting.  These turned out more like naan and didn't puff up properly.  They were also too big to be "mini."  

The second half, I flattened with my palm.  These puffed up beautifully and were more in line with my idea of "mini" pita.  This is the thickness I will be posting in my recipe below.  (The one below is one of the smaller ones.)


Whole Wheat Flax Seed Mini Pitas

1 1/2 c all-purpose flour
1 1/2 c whole wheat flour
3 Tbsp yeast
1 tsp salt
1 Tbsp sugar
1 1/2 c water
1 Tbsp olive oil
1/2 c ground flax seed

Place ingredients in bread machine in the order specified by your manufacturer (or, you can use a stand mixer to mix the dough).  Set on dough setting.  When the dough is finished, punch it down and divide into about 30 small, even pieces.  Cover with a towel and let rest for about 20 minutes before rolling.

Flatten each ball of dough with the flat of your hand into discs about 1/8" to 1/4" thick.  Place under towels to rise for about 15 minutes.

Place inverted cookie sheets into the oven and preheat to 400 F.  When the dough has risen, place discs on the cookie sheets.  Spritz the inside of the oven with water (this is optional, but helps with texture).  Close the oven door quickly (so the steam does no escape) and bake for about 8 minutes, or until pitas are puffed up and sound hollow when you tap on them.

Remove pitas from the oven and spray with cooking spray (this is also optional, but helps to soften the exterior).   Put the pitas in a bowl and cover with a kitchen towel.  Pitas may deflate slightly, but they should still have a pocket inside when you cut them.

Daddy had a turkey sandwich, couscous with kidney beans, strawberries, and a strawberry rice crispy treat.

I had the same thing, with a wrap instead of a sandwich.

We each have a turkey sandwich on wheat, some of my mother-in-law's pasta veggie salad, and some strawberries.

I packed our lunch in our Easy LunchBoxes, and the experiment to wrap the roll in a baggie was a messy idea, but it worked..

We each had leftover Crockpot Barbecue Beef and Beans, with a roll, some of my mother-in-law's veggie and pasta salad (I did not make this, she gave it to us, so I do not have a recipe).  Daddy has some fudge revel bites.  I have some strawberries (because I brought a baggie of fudge revel bites for coffee time at work!)

I have free lunch at work today, but I packed Daddy's lunch in his Easy Lunchbox.

He has a leftover bbq pork chop with some extra bbq sauce, some strawberries, and a couple Fudge Revel Bites.

Recipe: Fudge Revel Bites

Warning:  These are not healthy.  These are not quick and easy.  What they are is dangerously delicious.  And bite sized.  One in a lunch occasionally would be a fun and decadent treat.

The cafe where we go for coffee at work sells revel bars, and my co-workers and I have a really hard time showing restraint with them.  They have them about once a week, and they go so well with coffee...

So, when I found this recipe, I knew I had to give it a try.  And because I love mini things, I had to try making them in mini-muffin tins.  The recipe as stated has about 4 times too much chocolate fudge filling.. the remainder is sitting in my fridge, waiting for a good idea.  Any suggestions?  Other than eating it with a spoon?  Maybe we can dip strawberries and bananas in it... I am posting the recipe with 1/4 amounts.  There will probably still be leftovers.

The only change I made to the recipe itself was to use fat free sweetened condensed milk in the filling.  It's what I had on hand.  And, it worked perfectly.

Fudge Revel Bites
(Modified from Tasty Kitchen)

Cookie base: 
1 c butter
2 c brown sugar
2 eggs
2 tsp vanilla extract
1 tsp salt
1 tsp baking soda
2-½ c flour
3 c rolled oats

Fudge Filling
1 tsp butter
~3.5 oz  fat free sweetened condensed milk
~3 oz by weight milk chocolate chips (about 1/2 c)

Cream together 1 cup of butter, brown sugar, and eggs. Add the vanilla. Add 1 teaspoon salt, baking soda, and flour. Mix. Add oats and mix well.  Line mini muffin cups with liners and spray them with cooking spray. Scoop about a tablespoon of the dough into each cup and flatten, leaving a small indentation.  There will be leftover dough.  This is for the top of the bites.

Put the filling ingredients into a microwave-safe bowl and microwave for about 30 seconds and stir. Keep cooking at 15-second increments and stirring until melted.


Spoon a small amount into indentations in the dough.

Take bits of the remaining dough and flatten over the filling.  If some filling oozes out, all the better.

Bake at 350 degrees for 12-15 minutes.
This is one cut open.  Fudgey deliciousness.
