Recipe: Banana Crumb Mini Muffins

I had some bananas that needed using, and decided to make these. Delicious!

Banana Crumb Mini Muffins

3/4 c all-purpose flour
3/4 c whole wheat flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
3 bananas, mashed
3/4 cup white sugar
1 egg
1 tsp vanilla
1/3 c King Arthur Flour Cinnamon Flav-R-Bites (optional)
1/3 c applesauce (unsweetened)

Topping:
1/3 c packed brown sugar
1/4 c oats
1/2 tsp ground cinnamon
1 tablespoon butter

Preheat oven to 375  F.  Line mini muffin cup pans with papers, or spray well. 
Beat together bananas, sugar, vanilla, egg and applesauce. Stir in flour, baking powder, baking soda, sugar, and flav-r-bites. Spoon batter into prepared muffin cups.
In a small bowl, mix together topping ingredients, except for butter. Cut in  butter until mixture resembles coarse cornmeal. Sprinkle topping over muffins.
Bake in preheated oven for 10-14 minutes, until a toothpick inserted into center of a muffin comes out clean.

  1. OOOOHHHH Girl these are so GOOD!!!! I didn't have any wheat flour so used all white. YUMMY! Do you know if they freeze well?

  2. They are in my freezer right now, so I sure hope so! I have found that most muffins are pretty freezer friendly.
