Lunch: 9.9.11


For snack, The Girl has School Bus "animal" crackers, and some applesauce.

Lunch is a turkey and cheddar wrap with grated carrots and homemade mayonaisse, homemade granola bar, broccoli with Parmesan cheese, a clementine, and some chocolate covered pomegranate.

Lunch for the Boy: 9.9.11

Ogre Bread & Turkey sandwich: 20g
For Friday snack, The Boy has Ogre Bread with turkey.
Broccoli & Sugar Snap Peas: 2g, Ranch dressing: 2g, raisins: 15g, Fruit Leather: 5g, Crackers: 8g, feta: 1g, applesauce: 10g, cookies: 10g
Lunch is beet & cheddar crackers, feta cheese, applesauce in a to-go tube made in my food saver, broccoli, sugar snap peas, ranch dressing, raisins, polka dot fruit leather, and a couple mini cookie bites.

Recipe: Parmesan Spinach Chicken

I made this recipe up tonight, and it was wonderful.  The Girl even liked it!  And she doesn't normally like spinach.  I'd say that's a win.  It was ridiculously easy, too.

Parmesan Spinach Chicken

6 chicken tenders, or 3 boneless skinless chicken breasts, cut into strips.
1 10-oz box frozen chopped spinach, thawed and drained
1/3 c grated Parmesan cheese
2 tsp Italian seasoning
1 Tbsp butter
1/4 c onion, chopped fine
1 Tbsp flour
1/2 c skim milk
1/4 c mozzarella cheese

Preheat oven to 350 F.  Combine Parmesan cheese with seasoning and roll the chicken in it to coat.  Place the chicken in a baking dish.  In a small saucepan, melt butter and cook onion until soft.  Stir in the flour and whisk until thickened slightly.  Add milk and simmer for a few minutes until bubbly.  Stir the spinach into the sauce.  Spoon on top of the chicken and bake for about 30 minutes.  Sprinkle with the mozzarella and bake for an additional 5 minutes until melted.  Enjoy.

Lunch: 9.8.11


For snack, The Girl has applesauce (which she asked for in the silicone pop mold) and a homemade granola bar and a juice.

For lunch, she has a wrap on a whole wheat tortilla, with homemade mayonnaise, shredded carrot, ham, and cheddar cheese, peas, a clementine, a couple school bus "animal" crackers, and some chocolate covered pomegranate seeds.

Lunch for the Boy: 9.8.11

Yesterday, I mistakenly sent the wrong lunch with the wrong kids.  No one was happy.  The school nurse called to get the carb count on the lunch that The Boy actually had, and he wouldn't eat some of it... I hope I don't make that mistake again!
Raisins: 15g, cheese: 1g, Ogre Bread: 10g
For snack, he has raisins, a cheese stick, and some Ogre Quick Bread.  I'm not sure he'll eat the Ogre bread.... he liked it last time I made, but that was quite a while ago.  We'll see!

Lunch is some watermelon, beet & cheddar crackers, Brocolli & peas with some parmesan cheese sprinkled on them, homemade Greek yogurt with some maple stirred in - in a homemade go-gurt tube made with my food saver, some ABC graham crackers and a couple mini cookie bites, packed in our Easy Lunchbox.

Lunch: 9.7.11


The Girl's snack is some maple homemade Greek yogurt in a silicone pop mold (it didn't explode when The Boy brought it last week, so let's give The Girl a chance...), along with some grapes, and a juice (not pictured).

For lunch, she has some peas and carrots, a clementine, applesauce, a ham and cheese wrap cut into pinwheels, and a couple chocolate covered pomegranates.

Raisins: 15g, ABC Grahams: 11g
For snack, the boy has some raisins and a couple ABC Grahams (Newman's Own brand).
Applesauce: 15g, Turkey & Feta wrap: 16g, Carrots: 3g, Broccoli: 1g, Ranch: 2g, School bus "animal" crackers: 20g
His lunch is some applesauce, a wrap with turkey and feta (cubes that I ran through the food processor to turn into more spreadable/crumbles), carrots (cut with my OXO Fruit & Veggie corer into spirals), steamed broccoli, ranch, and a few school bus "animal" crackers, packed in our Easy Lunchbox.
