Recipe: Roasted Baby Red Potatoes

It's Rainbow Week at The Girl's School - each day, they are focusing on eating (and wearing) a different color, to highlight the health benefits of eating the rainbow.

Monday is Red Day, and I made some roasted baby red potatoes to go in her lunch.  Super delicious!


Roasted Baby Red Potatoes

2 lb baby red potatoes, quartered
4 Tbsp butter
1 tsp garlic powder
1/2 tsp paprika
2 Tbsp grated parmesan cheese
1 Tbsp lemon juice


Preheat oven to 350 F.  Put quartered potatoes in a baking dish, and top with pats of butter.  Top with spices and sprinkle lemon juice over them.  Bake for about 40 minutes, or until baked through, stirring a couple times during baking.
