Lunch for The Boy: 1.3.13

 The Boy's snack is a strawberry applesauce Snack'n'Go pouch (not pictured: 10g)

Baguette slices: 24g, Scotch Egg: 3g, dried apples: 5g, meringue mushrooms: 12g

His lunch is a Scotch egg leftover from Wacky Worldly Waffle Wednesday, sourdough baguette slices, apple slices from my mother, and meringue mushrooms.

Mommy & Daddy Lunches: 1.3.13

Daddy has a peanut butter and jelly sandwich on whole wheat bread, half a starfruit, a small banana, and some cashews, in his GoGreenLunchBox.

I have some leftover blackeyed peas with a clementine, trail mix, a couple dried apple rings from my mom, and a teabag for a lunchtime beverage, packed in my Easylunchbox.

Wacky Worldly Waffle Wednesday: Scotland!

Scotch Eggs on peppery waffles with a little maple syrup

We had a visit over the weekend from a good friend of ours (who lived with us last summer).  She is currently attending veterinary school in Scotland, so when I asked The Boy what country he wanted to honor in waffle form this week, he chose Scotland.

The kids kind of missed our friend Kate.  They were like this all weekend.

Because I had no fried candy bars or haggis on hand, I decided to make Scotch Eggs (which I understand were actually invented in London... but hey, they sound Scottish enough for me...)  I baked them instead of frying them, and I used our homemade rosemary garlic sausage to coat the eggs in.

After wrapping in sausage, dip in egg wash, then roll gently in bread crumbs.  Bake for about 25 minutes at 400 F.

I put a little ground pepper into the waffle batter to make them more savory.  I topped them with a little maple syrup, because while these are Scotland Inspired Waffles, we are still in Vermont... and they were totally delicious.

The kids will have some leftover Scotch eggs in their lunches tomorrow.  I'd say they are a win!

Back to school for The Girl!

Back to school!

For snack, The Boy has a squeeze pack of strawberry applesauce that he got in his stocking (not pictured, 18g).

Cornbread: 20g, ham: 1g, dried plums: 23g, melon: 7g, meringues: 15g

His lunch is some cornbread, some leftover Christmas ham, dried plums, slices of pepino melon (this was an exotic fruit in his stocking... he LOVES it and I might need to get it for him again), and meringue mushrooms.  He has a Lunchbox Love note in his lunch - don't miss my Giveaway!

Mommy & Daddy Lunches: 1.2.13

Happy New Year!

Daddy and I are back to work after the long weekend, and the kids are back to school, so it's business as usual around here.

Daddy has some leftover French Canadian Meat Pie (made by his aunt) for lunch, along with some stocking star fruit, and some homemade yogurt with strawberry jelly.  He didn't want anything else.  His lunch is packed in his GoGreenLunchBox.

I have some of my dad's Christmas liver pate (oh, how I swoon for this stuff), along with sourdough baguette, a clementine, some meringue mushrooms, and a tea bag.  I got some new tea for Christmas and I know I'll want some around lunch time.  My lunch is packed in an Easylunchbox.
