The Boy has some Chobani Champions Orange Vanilla yogurt for snack, along with some watermelon.
His lunch is some Scrabble Cheez-its in a lego container, some Naturebox dried mango (which he says he likes.. we'll see if he eats it. I sliced it thinly so that he could eat it more easily, with his lack of opposable teeth), salami, a hard boiled egg bear, apple slices, and a couple bus shaped strawberry sugar cookies.

Recipe: Cheesy Sweet Potato Tater Tot Casserole

I've had Tater Tot Casserole before, and I've loved it. I wanted to put some extra vegetables into it, and use sweet potato tater tots... and add more cheese. Because cheese is delicious. And I have quite a bit of Cabot on hand. This is not a situation that I see as a problem, merely an opportunity.
After last night, when the kids did not appreciate dinner so much, their gobbling up of tonight's meal was nice to see.
Cheesy Sweet Potato Tater Tot Casserole
1/2 lb ground beef
1/2 c thinly sliced yellow summer squash
1 tsp garlic powder
1 c frozen green beans, chopped fine
1 can condensed cream of mushroom soup
1 can condensed cheddar cheese soup
1 bag frozen sweet potato tater tots
1/2 c shredded cheddar cheese
salt & pepper to taste
Preheat oven to 350 F. Brown ground beef in a pan over medium high heat. Add in squash, garlic powder and saute until well cooked. Spread in the bottom of 9"x13" pan.
Combine the two cans of soup. Cover the top of the beef and vegetable mixture with the soup.
Arrange the frozen tater tots on top of the dish. Sprinkle with shredded cheese and bake for about 30 minutes or until cheese is melted and the tater tots are browned. Add salt and pepper to taste.

The Girl's snack for Tuesday is some Chobani Champions yogurt and some mini ranch crackers I found at the store.
Her lunch is a rainbow bread sandwich made in a canape pan, with ham, some grapes, a couple strawberry cookies, Cabot cheese, apple slices, and some salad with ranch dressing.

Back to school after the long weekend, and I made some Rainbow Pain de Mie - I froze dough for two batches, but the first batch I made in my canape pans, per The Girl's request. It isn't the nice swirl I like, at least not in the heart, but it's still a hit with the kids.
The Boy's snack is some Chobani Champions Honey-Nana yogurt, and some watermelon, with a cute panda pick. The Boy's school mascot is the panda, so these picks are always a hit with him.
His lunch is a rainbow bread sandwich in a heart shape, with salami and cheese, a dried fig from Naturebox, some mini ranch crackers (found them at the store on sale!), apple slices, strawberry sugar cookies, made with this press, apple slices, strawberries, and some Naturebox smoky pumpkin seeds in a covered silicone container.

I hope that everyone has had a lovely Labor Day! I spent the day making some of my Rainbow Pain de mie (and freezing two loaves of dough, ready to bake another day!) and using up some lovely fresh vegetables that my parents gave me. I have pounds and pounds and pounds of tomatoes to use up! And there are more coming!
I saw this recipe on Pinterest, and thought that I would try my hand at something similar.
I sliced a small eggplant, a small yellow squash, half a red onion, and a couple of the big giant beautiful tomatoes my mother practically begged me to take (what a problem to have, I know!). I arranged them in slices in a nice big oval baking dish (you could use a 9x13 baking dish).
I then brushed the surface of the vegetables with olive oil, then sprinkled with some garlic powder and a little salt. Because everything is made better with cheese, I topped the vegetables liberally with shredded Cabot Smoky Bacon Cheddar. Mmmmmm.
I then covered the dish in foil and baked for 30 minutes at 375 F, then removed the foil and let it bake for an additional 10 minutes, until nicely browned.
The verdict? I loved it. The Hubby loved it. The kids... mostly ate the cheese off the top. *sigh* They each had a couple bites from it, so that's something. Right?
What are your favorite ways to use up tons of tomatoes, especially for people who are not fans of tomatoes raw? Left to my own devices, I would simply eat caprese every meal, but that's not an option here, sadly...

Review & Giveaway: Chobani Champions Greek Yogurt
We all love yogurt around here. I usually make my own, but the kids sometimes want something different. I jumped at the chance to try out some Chobani Champions Greek yogurt.
Chobani Champions is the first Greek yogurt made with kids in mind, and their flavors have been a hit around here. Each serving of Chobani Champions is packed with 8g of protein, and has five strains of probiotics. These little cups of yogurt pack a nutritional punch!
You might be thinking that because the yogurt is made "for kids," Chobani Champions is going to be bursting with all sorts of extra sugar. This is happily not the case! Only natural ingredients are found in Chobani Champions, with no high fructose corn syrup.
Good news for parents of allergic kiddos - Chobani is free of wheat, nut, soy and shellfish allergens. Although shrimp yogurt would be pretty gross, I thought it is still worth mentioning. Because you never can tell...
The kids really love the Vanilla Chocolate Chunk yogurt, which lends just a little chocolately decadence to the smooth and creamy vanilla yogurt. Just enough, not too much. Winner.
I think the Orange Vanilla is my favorite. It's like a delicious yogurty creamsicle. It's also a flavor that I think I would have a hard time creating on my own, with my homemade yogurt.
All in all, the Chobani Champions are something I really like and would get again as a treat.
