Lunches for an Outing: 11.17.12

It's been a while since we have had a chance to hike, but some friends from my work had planned a hike up one of our favorite easier mountains, Snake Mountain.  We hadn't been there since July, and a fall hike is always fun, so we decided to go.

It was a glorious day for it.  Sunny and with just a little chill in the air.  We thoroughly enjoyed our lunch at the top.

My latest Naturebox arrived on Thursday, just in time to use in our lunches!

I had apple slices, a dried fruit and cinnamon muffin made in my new toy, Naturebox Country Ranch Peas in an Easylunchbox Mini Dipper, Naturebox Carrot chips, and a Tortilla roll up with PB Crave Razzle Dazzle.

The Boy had apple slices, a dried fruit cinnamon muffin, Naturebox Umami Roasted nuts and Naturebox Roasted Garlic pumpkin seeds in Easylunchbox Mini Dippers, and a tortilla roll up with choco choco PB Crave peanut butter.

What Are You Thankful For Blog Hop: Thankfulness Lunches

Today, the Bento Blogger and Friends are gearing up for Thanksgiving by sharing some things we are thankful for.  The time for stuffing sandwiches with cranberry sauce and mini pies in lunch will come, but today, we are just showing some thanks.

The Hubby's lunch.. see more below.
I have all of our lunches in one post, because one thing I am thankful for is family.  Note all the hearts in our lunches.  This is not a coincidence.

Waffles: 20g, ham & cheese: 1g, radishes, carrots & ranch: 3g, watermelon: 5g, apple slices: 4g

The Boy and Girl have small bananas for snack (not pictured, 28g).  The Boy's lunch is some curry waffles (no chutney), some ham with cheddar cheese hearts, radishes and carrots in a pea pod silicone container, with ranch dressing, along with watermelon and apple slices.  For his lunch, I want to say that I am thankful for the insulin he will receive to help his body digest this food.  Yesterday was World Diabetes Day, and I can't say enough how thankful I am for the tools we have to treat The Boy's Type 1 Diabetes.  I could go on, because it is something that I am passionate about, but this is a lunch blog, so on to the other lunches and other thankfulness.  For The Boy, I am also thankful that he is willing to try new foods (sometimes) and that he has a sudden fondness for radishes.

The Girl's lunch is a bed of spinach with pomegranate seeds (we are thankful for pomegranate season!), red grapes on a heart skewer, heart cheese (thankful for Cabot!) and ham, curry waffles (no chutney) and some apple slices.

The Hubby and I have a variation on the lunch I packed for The Girl.  We have a bed of spinach with Cabot cheddar and ham (heart shapes for The Hubby because I love him so very much), curry waffles with chutney, thank you very much, for us (I am thankful that my family likes Indian food so much!), along with some Naturebox Antioxidant boost (thankful for chocolate!), along with some red grapes - and I have some pomegranate seeds.  One reason that I used the spinach in my lunches is that I am thankful that The Hubby has come to love spinach, a vegetable he saw as the enemy when we first started dating.  Now, it is his favorite.

I have so much more to be thankful for, and in fact, on twitter, I am participating in a month of thankfulness, and I'm sharing something every day that I am thankful for.  It's good to think about such things.

Now, head on over to Biting the Hand that Feeds You to see what she's thankful for, and remember, this is a hop, so if you click on through, you should come back to me.  Finally, I am thankful for you, dear readers.  Thank you so much for inspiring me to share.

Worldly Waffle Wednesday: Curry Waffles and Homemade Mango Chutney

We love Indian food, and the kids love Major Grey Chutney.. I thought I would try my hand at making sweet mango chutney, and pair it with curry waffles.  The verdict?  The kids found my homemade sweet mango chutney too spicy and had me digging out the last tablespoon of the store bought Major Grey from the jar in the back of the fridge... but The Hubby and I thought that the homemade chutney was the cat's pajamas.  Seriously.  I have it in our lunches for tomorrow, and I can't wait to eat more of it.  I have maybe two cups of it left, so I will be using it on some more things for a while.. maybe even make some more for Christmas presents!

The waffles could have been a little more strongly curried, but I decided to use a shortcut and use some waffle mix I had hanging around and just add spices to them.  I think the waffle mix had some vanilla powder in it, because it definitely smelled of vanilla.  I used some Teeny Tiny Spice Vindaloo, along with some Teeny Tiny Spice Garam Masala, a touch of cumin, a touch of ground ginger, and a good palmful of curry powder.  Still just barely curried.  But totally yummy all the same.
Mmm, mangoes!

The only changes I made in the chutney was to use regular raisins instead of golden raisins, because it was what I had on hand.  Golden raisins would have been pretty, though.  To make it a little less spicy, I could have added less ginger.  I used at least the quarter cup of chopped ginger the recipe called for, possibly more.  I love ginger.  But, it did give it a kick.

So far, Worldly Waffle Wednesdays have been a huge hit around here.  The Boy requested Swedish cuisine next week.  I may not do waffles on Wednesday, seeing as Thanksgiving is on Thursday, but if I do, I think I am likely to go with cardamom waffles with maybe a touch of saffron, and top with some sort of lingonberry cream or just plain lingonberry jam, and not pickled herring or pea soup waffles... while I love both of the latter things, the former is no doubt the more popular combo for waffles...
