Lunches: 4.29.14 - Kid Made!

The Girl decided to make lunches for this Tuesday, and I think she did a pretty nice job.
Sandwich: 28g, apple slices: 6g, carrots & ranch: 5g
She packed a sandwich with hummus, turkey, and Muenster cheese, along with apple slices, carrots, and ranch in the animal shaped container.  He has a homemade granola bar for snack (not pictured, 24g).


She packed a tunafish sandwich for herself, with orange slices and a babybell cheese.  Her snack is also a homemade granola bar.

Lunches: 4.28.14

Back to school after Spring break!  Don't miss my Fun to Eat Fruit Giveaway.

I made Indian food for Sunday dinner, upon request of The Hubby.  I made naan, homemade paneer, hard boiled egg masala, and used the paneer to make saag paneer.  It was a huge win.  The kids gobbled up the saag paneer, requesting seconds and even thirds, and then wanted some in their lunches.  Score!

Saag paneer: 8g, naan: 10g, grapes: 6g, apple slices: 6g, malted milk egg: 6g
The Boy has a piece of naan, leftover saag paneer with a little of the hard boiled egg masala, grapes, apple slices, and a leftover malted milk egg from Easter.

Snack granola bar: 18g
His snack is a homemade granola bar (just one - this picture is of the whole batch), based on a King Arthur Flour recipe.


The Girl also has a piece of leftover naan, saag paneer with a little hard boiled egg masala, a small container with Major Grey chutney, grapes, apple slices, and a malted milk egg.  Her snack is also a homemade granola bar (not pictured)

Review & Giveaway: Fun to Eat Fruit!

It should come as no surprise to any of my readers that we all love fruit around here.  A while ago, I received a really neat product to review - Fun to Eat Fruit!

They send apples (pears are also available) that are printed with fun, food-safe designs.  You can even get your own logo printed!

The apples come in really cool packaging - a tube, with padding between each fruit, that is virtually bruise proof.  Anyone who has ever tried to send apples through the mail should appreciate this.  The tubes are packed securely in triangular boxes.  The Girl's gerbils have appreciated those boxes - though they are not picky when it comes to cardboard.  Really, the added bonus of the cardboard is that it adds another level of padding to ensure that your fruit arrives to you in good shape.

We really enjoyed the happy little apples - and they were nice fruit, too.  That's the really important thing - how did they taste, and did the kids like them.  The answer is YES on both counts!

Lunches for Outings: VINS (with bonus King Arthur Flour) and Eagle Mountain (4.24.14 & 4.25.14)

We had Spring break this past week, and the kids and I had a couple of adventures that included lunches.

On Thursday, we went to VINS, the Vermont Institute of Natural Science, with my mother.  It is mainly a raptor rehabilitation and education center, and we saw a couple of live raptor educational shows.


For lunches, we had a sandwich with hummus, ham, and Cabot cheddar, apple slices, strawberries, and some carrots.  My mother also brought some pretzels.


Of course, we stopped by King Arthur Flour before heading home, because it is 10 minutes from VINS, but two hours from home... it would have been a travesty if we had simply skipped it.  Mostly, we stopped by to admire their beautiful artisan bread.


The Girl took the opportunity to grind some wheat.


Then, on Friday, we got together with a friend and took a little hike on Eagle Mountain, enjoying lunch in the woods.  I brought us crackers, ham, a cheese stick, carrots, apple slices, and a couple Easter candies in the egg.

I am hoping that this spring and summer bring many outings and hikes.  Last year was kind of a dud, so I'm crossing fingers for more cooperative weather and timing.  We do love our adventures, and our Easylunchboxes!

Lunches: 4.18.14 - Easter Celebration Lunches

The kids are on Spring Break next week, and Easter is Sunday, so I figured I would steal borrow this idea for an Easter Egg lunch from Biting the Hand That Feeds You and make my own version, in my trusty Easylunchboxes. It did take some squishing and a rubber band to make the larger eggs fit into the Easylunchboxes, but I got it done..
Crackers: 5g, strawberries: 3g, sandwich roll-ups: 28g, apple slices: 8g

The Boy has an egg full of strawberries, with a couple other strawberries on the side, an egg with cheddar penguin crackers, two eggs with hummus, ham, and salami sandwich roll-ups, and two eggs with apple slices, all nestled in paper Easter grass.  His snack is a not-so-Eastery granola bar (not pictured, 34g).



The Girl has the same thing as The Boy - an egg full of strawberries, with a couple other strawberries on the side, an egg with cheddar penguin crackers, two eggs with hummus, ham, and salami sandwich roll-ups, and two eggs with apple slices, on a bed of paper Easter grass. Her snack is a granola bar and a banana (not pictured).

Lunches: 4.17.14

Pizza leftover day!
Pizza: 32g, apple slices: 8g, strawberries: 4g
The Boy has leftover personal pan pizza (he earned a Book-It! prize from Pizza Hut), apple slices, and strawberries.  His snack is a granola bar (not pictured: 34g).


The Girl has some leftover garlic parmesan pizza (from Pizza Hut, I can't really recommend it... I think the Girl will like it, but it was kind of bland.  The crust was delicious, but the sauce had almost no flavor.  Ugh.. I sprinkled some King Arthur Flour Pizza Seasoning on top, and that helped a bit).  She also has apple slices and strawberries.  Her snack is a granola bar and a banana (not pictured).

Lunches: 4.16.14

Got to love Vermont... it was 80 on Monday and it snowed last night.  I am so ready for a real spring, and the kids are as well.  We all want to go hiking (and we are not winter hiking people) - and this weather is making hiking season look far off.  Hoping it isn't that long..

Wrap: 37g, cheddar penguins: 10g, strawberries: 4g, apple slices: 8g
Anyhow, The Boy's Wednesday lunch is a chicken Caesar wrap (his tummy is feeling better, he said), along with some cheddar penguins, strawberries, and apple slices.  His snack is a granola bar (not pictured, 34g)


The Girl has sandwich pinwheels with hummus, Cabot cheddar, and ham.  She also has some romaine lettuce with parmesan cheese, strawberries, and apple slices.  Her snack is a granola bar (not pictured).

Recipe: Fresh Pasta with Spring Vegetables

I have been wanting to make some fresh pasta for about a week now.  I didn't want to just make it with plain tomato sauce, so I decided to make it with fresh spring vegetables.  I can't wait to try this with all sorts of other vegetables.  It was delicious.

You could make it with store-bought pasta, but I do love making my own pasta.  It's so much fun.  I made it with plain all-purpose flour this time, but you could make it with your favorite whole wheat pasta if you want.

Fresh Pasta with Spring Vegetables

Pasta Dough
4 eggs
2 c all-purpose flour
salt for boiling

Vegetable Sauce
1 Tbsp olive oil
1 small onion, diced
1 carrot, peeled and diced
2 c cherry tomatoes, quartered
1 bag baby spinach
1 lb asparagus, woody ends snapped off and the rest cut into 2" pieces
1 small zucchini, cut into small chunks
1 small yellow squash, cut into small chunks
2 tsp salt
1 tsp fresh ground pepper
1/2 c chicken or vegetable broth
6 fresh basil leaves, torn
1/2 tsp dried oregano

Prepare pasta dough by kneading together the eggs and the flour until a dough forms.  I used my food processor and pulsed until well-combined.  If dough is too sticky, add more flour.  Pat into a disk and cover with plastic wrap.  Allow to rest for ~30 minutes.

To make the sauce, heat the oil in a large pot - mine was 5 quarts and that was a good size.  Saute onion and carrots over medium heat for about 10 minutes.  Add the remaining vegetables, along with salt, pepper, basil, oregano, broth and salt and pepper.  Combine well and reduce heat.  Simmer for about 30 minutes.

Meanwhile, roll pasta dough out with a pasta machine (or by hand, if you want) and cut into linguine. Let dry for several minutes before cooking.


Bring a large pot of salted water to a boil and cook pasta for about 2-3 minutes, until it is al dente.


Drain the pasta and combine with the sauce.  Serve with a sprinkle of parmesan cheese, and a drizzle of Balsamic vinegar, if desired.

Family Lunches: 4.15.14

The Boy is recovering from being a little under-the-weather this weekend, and yesterday's lunch was too big for him (though he really feels all better, he ended up coming home yesterday because his tummy hurt from the big sandwich.)  He asked for a lighter lunch today, and I obliged.

Roll-up: 4g each (24g total), mandarin oranges: 15g, pretzels: 6g, strawberries: 5g, cheddar penguins: 12g
He has strawberries, mandarin orange slices, cheddar penguin crackers (Price Chopper brand), a couple Spring yogurt pretzels, and a wrap with hummus, ham, romaine lettuce, and Muenster cheese.  He liked the idea of the pinwheels because he can decide before lunch how many he thinks he might want to eat and still get the right amount of insulin. Because they are lower in carbohydrates than the bread, if he only eats half of what he expects to, his insulin dosage shouldn't change.  Oh, the joys of a Type 1 Diabetic child...his snack is a granola bar (not pictured: 34g)


The Girl has strawberries, apple slices, cheddar penguins, a chicken Caesar salad wrap, and a couple Spring yogurt pretzels.  Her snack is a granola bar (not pictured).


My lunch is a chicken Caesar wrap, apple slices, strawberries, cheddar penguins, and carrot slices.

The weather is supposed to be amazing today - but with wind gusts of up to 40 mph.  I was really hoping to bike, but I don't want to be blown into the lake on my commute.. *sigh* soon enough.

Monday again!

I made some homemade rolls this weekend, and we have leftovers in lunches.

Lunches: 4.3.14 plus Sausage Stuffed Piglet Buns

The Boy decided he wanted to make dinner on Wednesday night.  He did the recipe search himself, and was very proud to present to me his idea - Sausage Stuffed Piglet Buns from Girl Meets Dough.  Perfect.



We took a bit of a shortcut and used ready-made Italian bread dough (pop-n-fresh!).  Instead of using beans for eyes, we just used a bit of black food coloring.


Some of them turned out better than others, but The Boy was very proud.  We made them together, but I let him take the lead.  He served them with Caesar salad.

For lunch, The Boy has some leftover salad with dressing in the little dog container, a couple piggy buns, strawberries, and chocolate Bunny grahams.  His snack is a couple of Blueberry Belvita breakfast biscuits and apple slices (not pictured, 22g)
