Lunches: 2.21.14

Next week is school break!  For this Friday, I made quick lunches for the kiddos.

Sandwich: 30g, apple: 8g, fruit jelly: 5g

The kids have essentially the same lunch.  The Boy has a sandwich thin with turkey, spinach, hummus, and some Penzey's Sandwich sprinkle.  He also has apple slices, and a fruit jelly.  He has a granola bar for snack (not pictured, 27g).


The Girl also has a sandwich thin with hummus, turkey, spinach, and Penzey's Sandwich sprinkle, along with apple slices, and a fruit jelly.  She also has a granola bar for snack (not pictured).

Family Lunches: 2.20.14

Happy Thursday!

The kids and The Hubby all have essentially the same lunch for Thursday.


The sandwiches have a secret weapon today - my sister got me some Penzey's Sandwich Sprinkle.  She says it makes sandwiches magical.  I'll try it on my own sandwich and report back... it certainly smells divine.

Sandwich: 30g, banana: 28g, apple slices: 6g, fruit jelly: 5g
The Boy has a turkey and spinach sandwich with Cabot cheddar cheese, hummus, and Sandwich Sprinkle, on a sandwich thin, along with a small banana, apple slices, and a fruit jelly.  His snack is a yogurt (not pictured, 12g)

The Girl has the same thing as The Boy.  Her snack is a yogurt and a mixed fruit cup (not pictured).


The Hubby has a sandwich thin with hummus, turkey, spinach, Cabot Cheddar cheese, and some Sandwich Sprinkle, along with a small banana, apple slices, and a couple of Thin Mints.

Family Lunches: 2.19.14 (plus lunches from 2.17.14 and 2.18.14)

The Boy was home sick for a couple of days, so I have a back-log of lunches to post.  I'll start with today's lunches and then show you what was packed for the beginning of the week.

Sandwich: 40g, carrots and hummus: 3g, apple slices: 6g, raisins: 11g
For today, The Boy has a turkey and salami sandwich on a kaiser roll with hummus, along with carrots, hummus for dipping, apple slices, and raisins.  His snack is a yogurt (not pictured, 12g).


The Girl has a turkey and salami sandwich on a kaiser roll with hummus, along with carrots and hummus for dipping, apple slices, and raisins.  The Girl has a yogurt and some mixed fruit for snack (not pictured)


The Hubby has a turkey and salami sandwich on a kaiser roll with hummus, along with grapes, apple slices, and a couple Girl Scout cookies.


Yesterday, The Girl had a kaiser roll with turkey and hummus, grapes, apple slices, and carrots.  Her snack was a yogurt and a mixed fruit cup (not pictured).


Monday, The Girl had a sandwich thin with hummus and turkey, a small banana, a fruit jelly, grapes, and carrots.  Her snack was a yogurt (not pictured)


The Hubby had a leftover turkey burger with sauteed mushrooms, raisins, and grapes.

Here's hoping for no more sickness, and a good second half of the week!

Lunches: 2.13.14

I have a sinking feeling that school is going to be canceled tomorrow for Valentine's Day... we've got a whopper of a snow storm coming through.  Today, though, the snow isn't supposed to start until late afternoon, so we're good to go for school.
The Boy's Lunch: Sandwich: 30g, grapes: 5g, carrots: 2g, mandarin oranges: 15g, raisins: 22g

Kid Made Lunches and Lunches With Love: Valentine's Day Blog Hop 2013 - 2.13.14

I was sick Sunday night and Monday.  I had a fever and a horrible headache, as well as a fun dizziness every time I tried to do anything exciting, like stand up.

Needless to say, I wasn't making any lunches.  So, the kids made their own.

There was an inordinate amount of giggling coming from the kitchen on Sunday evening, as the kids declared they were "scientists" and had made a concoction of chocolate and marshmallows, which they had molded in a heart silicone mold I had, put toothpicks in, and frozen.  Pretty funny.

To their credit, they declared that they also needed some vegetables, so they grabbed the cauliflower from the fridge, and with minimal help from The Hubby, made my roasted cauliflower "popcorn" to finish out their lunches.  So, it's not all about the chocolate and marshmallows.  They know it's about balance.


I thought it would be a good set of lunches to include in my Valentine's Day Blog Hop from the Bento Bloggers and Friends.  I also included some special lunches I made for the kids (and for The Hubby, my forever Valentine) in the post.

I love when the kids make their own lunches, though I do enjoy making them for them, but it's fun to see what they come up with on their own.

The Boy's Monday lunch was a feta and jelly sandwich (yes, his choice), with a cut-out on top, along with some roasted cauliflower, a yogurt, some more cheese, and a really good portion of blueberries.


His Tuesday lunch was a cheese and jelly sandwich, a fruit jelly, one of the marshmallow chocolate heart creations, a yogurt, blueberries, and some apple slices that he gleefully colored with food markers.
Sandwich: 30g, blueberries: 3g, apple: 4g, graham crackers: 6g
For Today, I made him a cheddar and jelly sandwich with a heart cutout, blueberries on a heart skewer, half a small apple with a small heart cut out, and some mini graham crackers in a heart shaped cup.  His snack is a yogurt (not pictured, 12g)


The Girl's Monday lunch was a jelly and cheese sandwich imprinted with a Cute-Z-Cute cutter, a fruit jelly, yogurt, a chocolate marshmallow heart creation, blueberries, and roasted cauliflower.


The Girl's Tuesday lunch was made with love by The Boy.  He gave her a cheese and jelly sandwich, a marshmallow chocolate heart, a yogurt, blueberries, and apples "colored to look like watermelon."


For Today, I made her a sunbutter and jelly sandwich with a heart cutout, a marshmallow chocolate heart creation, blueberries on a heart skewer, heart shaped apple pieces, and some mini graham crackers.  Her snack is a yogurt with some honey stirred in (not pictured).

The kids even made me a sick-day lunch, which was a Ramen soup, a little chocolate that The Boy colored with a food marker, an apple sauce, and two starburst candies "because candy makes everyone feel better."  And so it did.  At the very least it made me feel loved.


For my own Valentine, my dear Hubby, I made a peanut butter and jelly sandwich (which he would eat every day if I let him) cut into hearts, with imprints from a stamp, along with blueberries, a couple Do-so-Dos (Girl Scout Cookies have arrived!), half an apple with a heart cut out, and some mini graham crackers.

Family Lunches: 2.5.14

Happy Wednesday!  It's another assembly-line style set of lunches.

We had tacos for dinner last night, which means taco salad for us all.

We have lettuce, a taco shell, taco meat with sauce (with a fork to scoop it over the salad once the shell has been broken up), and apple slices.

The Boy's Lunch: Lettuce: 2g, taco shell: 6g, apple slices: 4g, meat and sauce: 1g
(He also a snack mix: 16g - His lunch without it did not have enough carbs to last him through the afternoon)

Family Lunches: 2.4.14

The kids and I all have the same lunch today.  I made them assembly-line style.

We all have a mini bagel, a small banana, apple slices, Goldfish puffs, a fruit jelly, and a couple Mini S'mores Bites.

The Boy's lunch:  Banana: 28g, bagel: 28g, mini s'mores bites: 6g, fruit jelly: 5g, apple slices: 6g, puffs: 8g

The Girl's Lunch
Simple.  When The Boy walked into the kitchen and saw what I had made, he said "Wow, that looks like a really yummy lunch."  Sometimes, simple is ok.

I had some leftovers from Superbowl Sunday food, and used them in lunches.

Recipe: Jalapeno Popper Sliders

It's Superbowl Sunday, and time for more delicious food.  (I don't watch football, but The Hubby does.  I'm in it for the food and the commercials).


A while back, one of our favorite local restaurants had a special of Jalapeno Popper Burgers.  They were delicious. When it came time to make dinner for Superbowl Sunday, The Hubby asked if I could make something like them, and I think I did a pretty good job.


I started out with fresh ground sirloin, because it was on sale at the store, and I have a grinder, so I had no reason not to.  This is, of course, optional.

The kiddos liked them, though they dug out the jalapenos from the burgers.  The cheese sauce was really easy and yummy.  I made them into sliders, because... well, tiny food.

Jalapeno Popper Sliders

Sliders:
1 lb ground beef
2 oz cream cheese
1/4 c jarred sliced jalapenos

Cheese sauce:
1/2 c fat free evaporated milk
4 oz cream cheese
1 1/2 c shredded cheddar cheese (I used Cabot Extra Sharp cheddar)

Slider buns (I made my own with this recipe, but you could either buy slider buns or cut down full sized burger buns)

Form the sliders by taking a small amount of beef, then layering in a teaspoon of cream cheese and topping with a couple slices of jalapeno. (I used my slider kit to make the burgers).

Top with a little more beef.  Press to seal.

Grill burgers in a grill pan (or in a frying pan) until cooked to your preference.

Oh, this cheese sauce
Meanwhile, make cheese sauce.  In a saucepan, heat the evaporated milk.  Add the cream cheese and whisk until melted.  Add the cheddar and continue stirring to melt.


Serve burgers on slider buns, with a generous dollop of cheese sauce.  I prefer mine with a couple more slices of jalapeno.

Recipe: Mini S'mores Bites

The Hubby had an inspiration this morning about mini S'mores bites, and being that we are a good team, I made them happen.  That's how we roll.


They aren't so much a recipe as a technique, and one that I hope you employ soon!

I found mini graham cracker squares, and you know that I love mini things, so I knew they had to be part of this treat.


I took mini graham crackers (and you could use bigger squares if you are so inclined) and spread them with a little marshmallow fluff, then topped them with another graham cracker.


Then, I melted some milk chocolate and drizzled it over the top.

I repeated the drizzle with a little melted dark chocolate, because I can't help myself.


Look at these tiny, bite sized treats!

I then froze them for about 15 minutes, to harden the chocolate up.

Delicious S'mores without the fire, in an adorable bite-sized package?  Sounds good to me!
