Lunches: 1.25.17

The Boy was sick on Monday (though The Girl brought lunch, I did not blog it), and yesterday was a snow/ice day... so welcome to Wednesday!
Sandwich: 30g, carrots: 3g, apple slices: 8g, pretzels: 8g


The Boy has a sandwich with hummus and ham, along with carrots, pretzels, and apple slices.  His snack is a granola bar (not pictured, 18g)

The Girl has a sandwich with hummus and ham, carrots, pretzels, and apple slices.

Lunches: 1.18.17

I made another batch of Chicken Cordon Bleu last night to tweak my recipe for KidsVT - watch for that article coming soon!
Bagel thin sandwich: 27g, apple sandwich: 8g, pretzels: 8g

The Boy, however, did not want leftovers for lunch.  So, he has a bagel thin sandwich, with hummus, ham, and greens.  He also has pretzels, and apple slices.  His snack is some honey roasted peanuts (not pictured, 9g).


The Girl has leftover Chicken Cordon Bleu, orange slices, and pretzels

Lunches: 11.17.17

Happy Tuesday!
Spaghetti: 25g, applesauce: 14g, pretzels: 9g


The Boy has some leftover pasta for lunch today, along with applesauce, and some pretzels.  His snack is a granola bar (not pictured, 18g).

The Girl has a salad (need to get some salad dressing - she just has some Penzey's Sandwich sprinkle on it), along with Cara cara orange slices, and cashews.

Lunches: 1.11.17

The problem with a loaf of homemade bread in the bread machine is that it doesn't last long!  I should have made more last night, and I did not, so today, the kids have rather snacky lunches.
Crackers: 18g, pepperoni: 1g, cheese: 1g, apple slices: 8g, yogurt: 9g


The Boy has crackers, pepperoni, and cheese, along with apple slices, and a yogurt.  His snack is an applesauce (not pictured, 14g)

The Girl has crackers, pepperoni, and cheese, with apple slices, and some cocoa dusted almonds.

Lunches: 1.10.17

I was out of bread yesterday, so I threw some King Arthur Flour Oatmeal sandwich bread in the bread machine overnight.  I don't normally bake in the bread machine, only using it to mix, but it is really nice to wake up to the scent of fresh bread wafting through the air.  It is a pleasant alarm clock.

For lunches, we kept it simple.
Sandwich: 45g, melon: 5g, raisins: 8g

The Boy has some melon,  raisins, and a sandwich on homemade bread with peanut butter and jelly.  His snack is seaweed snacks (no picture, 1g)

The Girl has an orange, raisins, and a peanut butter and jelly on homemade bread.

Lunches: 1.9.17

Yesterday, I was working on my next recipe for my KidsVT column, and it's going to be Chicken Cordon Bleu - therefore, leftovers end up in lunches!

Chicken: 4g, bread: 15g, melon: 6g, raisins: 8g

For lunch, The Boy has leftover Chicken Cordon Bleu, baguette slices, melon, and raisins.  His snack is some crackers (not pictured, 16g).


The Girl has leftover Chicken Cordon Bleu, baguette slices, Cara Cara orange slices, and raisins.

Lunches: 1.6.17

It's Friday, and I didn't want to open the package of lunch meat I have before the weekend (because I don't want it to possibly go bad through not using it over the weekend) - so, the kids have super simple lunches.
Sandwich: 50g, raisins: 12g, apple slices: 12g

The Boy has a peanut butter and jelly on a multigrain sourdough bread, along with raisins, and apple slices.  His snack is a trail mix (not pictured, 24g).

The Girl has a peanut butter and jellly sandwich on a sourdough, along with a cara cara orange.

Lunches: 1.5.17

Sickness is making it's way through the house - almost out now - but, it called for comfort food.  I made a variation on Pioneer Woman's Macaroni and cheese - but I used a mixture of caramelized onion cheddar, fontina, and Monterey Jack cheese, and I topped with fried onion strings (like you'd put on a green bean casserole), and omitted the egg,

I made a HUGE batch, so everyone has leftovers for lunch.

Mac & Cheese: 60g (he may not eat all of it), raisins: 12g, trail mix: 24g

The Boy has mac & cheese, raisins, and trail mix.  His snack is cheese crackers (not pictured, 16g).

The Girl has mac & cheese, raisins, and trail mix.

1.3.17

Back to school, but I've been sick for a few days, so they aren't the most inspired lunches.  (I'm getting better, but still not enthusiastic about handling other's food right now... so I'm touching as little as possible)
Sandwich: 40g, pretzels: 10g, nutella: 9g, raisins: 10g

The Boy has a peanut butter and jelly sandwich, raisins, pretzels, and some nutella that Santa brought.  His snack is a granola bar (not pictured, 24g).

Promise, this is yummier than it looks
The Girl's lunch is delicious, but not pretty... I made a split pea soup for dinner a few days ago, and she loved it.  Normally, a soup wouldn't be good to pack in an Easy Lunch Box, but pea soup?  Nice and THICK until you heat it up, so no leaking!  She also has pretzels with Nutella, and a trail mix.
