Wacky Worldly Waffle Wednesday: China

The Boy wanted Chinese inspired waffles this week, and I had a lot of fun with them!

Orange Ginger Chicken & Waffles
I topped them with Orange Ginger chicken, roasted broccoli with sesame seeds, sauteed baby corn, and a couple mandarin oranges.  And for the waffles, I used waffle mix, but I added about 1/4 c chopped scallions and 2 tsp sesame oil (along with the rest of the oil called for in the mix.  Less than half the oil was sesame oil.  I just wanted a slight flavor).

The chicken is something I will absolutely make again.  I bought a sauce (La Choy Orange Ginger Sauce), and it was good, but I might try making my own next time.  I didn't have time tonight.

Orange Ginger Chicken

2 lb boneless, skinless chicken breast, cut into small chunks
1 egg + 1 Tbsp water
1 c flour
3 Tbsp ground ginger
1/2 tsp ground pepper
1/2 tsp salt

1 jar La Choy Orange Ginger Sauce
1 Tbsp sesame seeds


Preheat the oven to 375 F.  Whisk the egg and the water together in a bowl (preferably with a cover) and put the chicken pieces in, shaking or rolling them around to coat, doing more than one batch if necessary.

Mix together the flour and spices in a large bag.  Add the egg coated chicken to the bag and shake to coat well.  Place the chicken on a baking sheet in a single layer and bake for 25-30 minutes, turning after about 15 minutes.

Remove the chicken from the baking sheet and place in an oven proof serving dish.  Stir in the jar of sauce and coat the chicken, sprinkling with the sesame seeds, and return to the oven to heat the sauce through before serving.

Lunch: 1.9.13

One of these is for The Boy, one is for The Girl

The Girl's snack is a Nutella snack pack I found at the store.


Her lunch is a clementine, veggie chips, Chinese dumplings, a mini spring roll for her to try, and a mixed fruit cup.

Lunch for The Boy: 1.9.13

This week's Wacky Worldly Waffle Wednesday is going to be Chinese inspired waffles, and The Boy really wanted to try spring rolls, so I got some mini spring rolls for him to try.

One of these is for him, one is for The Girl: 33g for one package.

His snack is a Nutella Snack pack that I found.

Spring rolls and sauce: 30g, dumplings: 10g, mandarin oranges: 10g, chips: 8g

His lunch is mandarin oranges, vegetable chips, mini spring rolls and sauce, and dumplings.

Mommy & Daddy Lunches: 1.9.13


For Wednesday lunch, Daddy has some fresh pineapple, Holiday sprinkled pretzels, some snowflake shaped Ritz crackers with sundried tomato smoked gouda spread, and pieces of carrot and ham in his GoGreenLunchBox.

The Girl's snack is a couple crescent rolls sprinkled with cinnamon sugar (not pictured).


Her lunch is some mini tacos, fresh pineapple, a small pear, a couple fig newtons, and a clementine.

Tacos: 15g, raisins: 16g, fig newtons: 23g, clementine: 9g, pineapple: 10g
His lunch is some mini tacos, fresh pineapple, clementine, raisins, and a couple fig newtons.
