Wacky Worldly Waffle Wednesday: China

The Boy wanted Chinese inspired waffles this week, and I had a lot of fun with them!

Orange Ginger Chicken & Waffles
I topped them with Orange Ginger chicken, roasted broccoli with sesame seeds, sauteed baby corn, and a couple mandarin oranges.  And for the waffles, I used waffle mix, but I added about 1/4 c chopped scallions and 2 tsp sesame oil (along with the rest of the oil called for in the mix.  Less than half the oil was sesame oil.  I just wanted a slight flavor).

The chicken is something I will absolutely make again.  I bought a sauce (La Choy Orange Ginger Sauce), and it was good, but I might try making my own next time.  I didn't have time tonight.

Orange Ginger Chicken

2 lb boneless, skinless chicken breast, cut into small chunks
1 egg + 1 Tbsp water
1 c flour
3 Tbsp ground ginger
1/2 tsp ground pepper
1/2 tsp salt

1 jar La Choy Orange Ginger Sauce
1 Tbsp sesame seeds


Preheat the oven to 375 F.  Whisk the egg and the water together in a bowl (preferably with a cover) and put the chicken pieces in, shaking or rolling them around to coat, doing more than one batch if necessary.

Mix together the flour and spices in a large bag.  Add the egg coated chicken to the bag and shake to coat well.  Place the chicken on a baking sheet in a single layer and bake for 25-30 minutes, turning after about 15 minutes.

Remove the chicken from the baking sheet and place in an oven proof serving dish.  Stir in the jar of sauce and coat the chicken, sprinkling with the sesame seeds, and return to the oven to heat the sauce through before serving.
