Recipe: Thin Crust Personal Pizzas

What's more fun than make your own pizzas?

The kids loved them!
The Boy's creation

I had some store bought pizza dough in the freezer, which I pulled out this morning to thaw.    You could make your own.
Grown up pizzas

I used my pasta maker to roll the dough out evenly and thinly.  I love using my pasta maker for this time of thing.
Mine.  Sundried tomatoes.  Roasted peppers.  Feta.  And more.

I separated the pizza dough into 8 even sections, rolled them out thinly, brushed with olive oil, and then let everyone top their own.
The Boy liked making them.  And eating them.

Bake at 425 F for about 8-10 minutes, and enjoy!

Lunch for the Boy: 9.19.11

Monday again!  Hope that you all had wonderful weekends.
Pretzels: 11 g, apples: 8g

The Boy's snack is some cheddar pretzel sandwiches and an apple (dusted with Fruit Fresh to keep it from browning).  A note - this apple is not from our own trees.  I foolishly bought some apples before realizing that we would have ample soon enough.  Using them up in lunches!
Carrots & hummus: 5g, grapes: 6g. crackers: 12g, ham: 1g. feta: 1g. yogurt: 6g, cookie bites: 4g

Lunch is grapes, carrots with hummus in the little container, crackers, ham, feta, yogurt in a tube made in my food saver, clipped at the end to make it easier to open, and closed with a clip from IKEA, along with a couple mini cookie bites.

Recipe: King Arthur Flour Cider Doughnuts

The wonderful folks at King Arthur Flour sent me some boiled cider to try out.  I have some fun plans for it, but first and foremost, cider doughnuts were calling to me.

I followed King Arthur Flour's recipe for the doughnuts, but I used two mini doughnut pans, and I scooped the batter into a pastry bag and piped it into the pans.  This worked beautifully.

After baking, I skipped the glaze from King Arthur Flour, and instead I brushed the tops of the doughnuts with a little melted butter and then dipped them in this beautiful Autumn sugar blend mixed with a little cinnamon.  I can't find this sugar blend online, we carry it at Kiss the Cook.

It's nice that they are baked, because I can feel ok giving them to my kids for breakfast.  They are totally delicious.  I would like to try adding some more of the boiled cider to the next batch, to get more of that delicious flavor in there.  I can't wait to try some more recipes using it!  Thanks, King Arthur Flour!

(Each mini doughnut has about 16g carbs without the topping, call it 20g with the sugar)

Recipe: German Apple Cake

We picked a couple apples from our trees... just a couple.

You are forewarned.  There are apt to be a few apple recipes coming your way for a while.

I made this German Apple Cake (modified from Allrecipes.com) and it was incredible.  I even had a couple bonified visitors from Germany have some at the store I work at (part time) and they approved.

Make this!  The reviews say that it doesn't keep well, turning soggy after the first day.  I can see that.  It wasn't a problem, as customers ate it all up before it was even mid-afternoon.  Yums.  I'll be making this one again.

German Apple Cake

4-5 c apples - peeled, cored and diced
2 eggs
1/4 c melted butter
3/4 c vegetable oil
1 1/2 c sugar
2 tsp cinnamon
2 c all-purpose flour
1 tsp baking soda

Preheat the oven to 350 F.   Combine eggs with butter and oil until well mixed and creamy.

Add in sugar and cinnamon, and then carefully incorporate flour and baking soda.  Fold in apples with a spatula.  Line a 9"x13" pan with parchment paper.  Pour the batter into the pan and spread evenly with an offset spatula.

Bake for about 45 minutes, or until a skewer inserted in the center comes out clean.  Cool completely before cutting into squares and serving.
