Oh my. This soup was gone so quickly, the only picture I was able to get of it was this one...
I told the kids it was "vegetable soup." When they had eaten it happily (and The Girl went back for seconds! Thirds!), I told them it had three kinds of mushrooms in it. The Boy announced that he didn't really like it after all, but the Girl cheerfully declared that she must like mushrooms then! Score.
The Hubby's only complaint was the brownness of it. He isn't thrilled with brown food. I can understand that.
Triple Mushroom Soup
1 Tbsp oil
1 Tbsp butter
1 small onion, chopped
1 c sliced mushrooms
1 c sliced baby portabello mushrooms
1 1/2 c sliced shitake mushrooms
2 Tbsp apple cider vinegar
2 tsp Worcestershire sauce
6 c vegetable stock (could use chicken stock)
1 can condensed cream of potato soup (could also use some cooked potato and some cream or milk or evaporated milk)
Salt and pepper to taste
Heat the oil and butter together in a large stockpot. Saute the onions over medium high heat until translucent then add the mushrooms. Cook, stirring occasionally, until they soften, about 5-10 minutes.
Deglaze the pot with the vinegar and Worcestershire sauce. Pour in the stock and bring to a boil. Stir in the canned soup.
Cook for about 10 minutes over medium heat to let the flavors combine. Puree using an immersion blender. Allow to cook down over low heat for another 20 minutes or so. Add salt and pepper to taste. Enjoy!

Fer lunch, an' this be fun... I made treasure map fruit leather. Th' inspiration came t' me while I be rid'n me bike t' work yesterday, an' I be thrilled at how it turned out. It be applesauce wi' some colored applesauce piped into a map. I could have used darker fruit puree, but I didn't have any on hand.

Th' Lassey has th' same lunch, but wi' strawberries instead o' melon, an' a Cabot Cheddar single instead o' a str'n cheese.
The Girl has the same lunch, but with strawberries instead of melon, and a Cabot Cheddar single instead of a string cheese.

Lunch: 9.18.12
Only one more day until Talk Like a Pirate Day... and my Bento
Blogger & Friends have something really big coming for you all - a

The Girl's snack for Tuesday is a Bunny shaped hard boiled egg and a Cabot cheese single.
Her lunch is some rainbow pasta casserole that I improvised for dinner - with tuna, cheese, a little Cabot Greek yogurt, some sundried tomato vinaigrette, and cracker topping. She loved it, so I gave her leftovers. She also has some strawberry slices, and a couple strawberry flavored sugar cookies.

Her lunch is some rainbow pasta casserole that I improvised for dinner - with tuna, cheese, a little Cabot Greek yogurt, some sundried tomato vinaigrette, and cracker topping. She loved it, so I gave her leftovers. She also has some strawberry slices, and a couple strawberry flavored sugar cookies.

His lunch is a whole grain English muffin, with cheese and salami, with these picks in them, along with some watermelon and cantaloupe, applesauce, and he requested half a pandan wafer and half a taro wafer. I covered the Easylunchbox with Glad Press-n-seal to keep the applesauce from leaking. I should have used one of my new Mini Dippers, but I honestly forgot. Oops!

Lunch: 9.17.12
I'm trying Spaghetti tacos a la iCarly in lunches today. Hope that they like them cold! They said they would eat them... we'll see.
The Girl has a banana for snack (not pictured).
Her lunch is a spaghetti taco, some refried beans in an Easylunchboxes Mini Dipper container, a yogurt fruit jelly, some strawberry slices, and a couple homemade strawberry cookies.
All laid flat and ready to close up!

I made some spaghetti tacos (inspired by iCarly - I made them with taco spiced alfredo sauce) for dinner, and the kids insisted that they would love them cold in their lunches. We'll see!

The Boy has a spaghetti taco, a Easylunchboxes Mini Dipper with some leftover refried beans, a yogurt fruit jelly, strawberries, and some oatmeal cinnamon alphabet cookies I found at the grocery store.
I had to put the taco down on it's side to fit the lid on... I really hope he eats it!

Recipe: Chewy Maple Spice Cookies
It's beginning to feel a lot like Fall around here, and that puts things infused with maple and pumpkin and lovely warming spices into my mind.
These cookies, based on this recipe, have the maple and the spices, and the lovely chewiness. (Pumpkin recipes will come.. and I have plenty in the archives.)
Chewy Maple Spice Cookies
1/4 c shortening
1/4 c butter, softened
1 c packed light brown sugar
1 egg
1/2 c pure maple syrup (Vermont, if possible, of course - says the Vermonter. I may be biased)
1/2 tsp vanilla
1 1/2 c all-purpose flour
2 tsp baking powder
1 tsp cinnamon
1/2 tsp nutmeg
1/4 tsp ground ginger
1/2 tsp salt
1/2 c coconut
Preheat oven to 350 F. Cream together the butter and brown sugar. Mix in egg, maple syrup, and vanilla. Whisk the dry ingredients together and then stir into wet ingredients. Bake for 9-12 minutes, or until lightly browned. Remove from oven and let cool on the pan for 5 minutes before transferring to wire racks to cool. Enjoy!
