It was feeling like fall this morning, and so I made some Pumpkin Muffins with Raisins. I got this cool pan from Wilton, too, so made some of the muffins in Halloween shapes. Very fun.
Pumpkin Mini-Muffins with Raisins
2 c white flour
2 c whole wheat flour
2 c sugar
2 tsp baking soda
1 tsp baking powder
1 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground ginger
1/4 tsp ground cloves
2 tsp salt
1/4 c oil
3/4 c applesauce
3/4 c boiling water
1 c raisins
4 eggs
1 15-oz can pumpkin (~2 c)
Preheat oven to 350 F. Mix together eggs, sugar, pumpkin, applesauce, and oil. Pour boiling water over raisins and let sit to plump. Add dry ingredients to wet mixture and mix well. Stir in raisins and water until well blended.
Line muffin tins with papers or grease well.
Scoop muffin batter into prepared tins and bake for 12-15 minutes, or until a toothpick inserted in the middle comes out clean.
I just wanted you to know that after seeing your muffins this morning, I bought a baking pumpkin today! I am going to try your recipe this weekend!
ReplyDeleteHave fun!! I always use canned pumpkin, but fresh pumpkin is just as good! I don't know how easy it is to find organic canned pumpkin...
