Recipe - In Honor of Dr. Seuss: Green Eggs & Ham (Version 1)

What's more Seussical than Green Eggs and Ham?  I'm going to be making another version tomorrow, for the girl, but this one was all for me.

And it was yummy.

Green Eggs & Ham (Version 1)

1 egg
1/4 c raw spinach, chopped finely
1 piece Canadian bacon
1 slice cheddar cheese
1 english muffin, toasted
1 Tbsp chopped red onion (optional)
1 Tbsp hummus

Heat a frying pan to medium high and lightly butter.  Crack an egg into the pan and let cook until white is nearly set.  Cover egg with spinach and cheese, put Canadian bacon in the pan, and cover.  Cook until spinach is wilted and cheese is melted.  Yolk should still be soft.

Spread hummus on toasted english muffin (I used a whole grain one), put red onion on if using, and top with egg, spinach, cheese, and Canadian bacon.
