Recipe: Sundried Tomato Spread

This is a recipe that my sister got from a friend years ago.  It is really delicious.  I served it at my party this past weekend in phyllo cups, and also had some to spread on crackers.  Yum.



Sundried Tomato Spread

1/4 c sundried tomatoes (the kind packed in oil)
1/4 c olive oil (I use the oil from the tomatoes)
2 Tbsp fresh basil
3 cloves garlic, minced
1 Tbsp sugar
8 oz cream cheese (I used 1/3 fat neufchatel), softened

Combine all ingredients in a food processor until well mixed.  Serve with crackers, veggies, or bread.  You can also blend without the cream cheese and layer the sundried tomato mixture on top for a pretty presentation.
