Lunch: 2.28.11


Snack is a banana, a juice, and nilla wafers with a little bit of nutella between them.

Lunch is a leftover buffalo chicken stuffed shell with creamy ranch sauce, homemade Greek yogurt with vanilla stirred in, an apple, and some carrots with ranch dressing.

Recipe: Buffalo Chicken Stuffed Shells with Creamy Ranch Sauce

A group of my friends decided to do "Synchronized Cooking" - Choose a recipe, and on a certain day (or weekend, in this case), everyone cooks it - or their version of it.  This week, we chose Buffalo Chicken Stuffed Shells.  This is my version of it.

Buffalo Chicken Stuffed Shells with Creamy Ranch Sauce

1 package jumbo shells
2 boneless, skinless chicken breasts, cut into very small pieces (bite size)
1 Tbsp olive oil
2/3 c hot sauce (I used Frank's Buffalo Wing Sauce)
1/3 c blue cheese crumbles
1/3 c shredded part-skim mozzarella cheese
1/3 c shredded parmesan cheese (I used reduced fat)
2 c fat-free ricotta cheese




For Creamy Ranch Sauce
3 oz neufchatel (low fat cream cheese)
1/2 c skim milk
1/3 c shredded parmesan cheese
1 packet ranch dressing seasoning

Preheat oven to 400 F.

Boil a big pot full of water and cook pasta shells according to directions.  Drain and set aside.

Heat a saute pan over medium heat and add olive oil.  Put the bite sized chicken pieces into the pan and cook until no longer pink in the center.

In a bowl, mix together the hot sauce and cheeses. 

Stir cooked chicken into the cheese and hot sauce mixture.  Stuff the shells with the mixture and fill a 9x13" baking pan with them.  (May be enough for a second smaller pan)

In a small skillet, melt the neufchatel cheese.  Stir in the milk and the shredded parmesan cheese into the melted cheese, and then stir in the ranch seasoning packet.  Spoon this sauce over the stuffed shells.


Bake the stuffed shells for 20-30 minutes.  Serve with celery, if desired.

Lunch: 2.17.11

I forgot my camera at work and so there's no picture of this lunch!  :(

Snack was the same as yesterday - she loved it - nutella and strawberries on a whole wheat tortilla rolled up, along with a juice.

Lunch is a fruit cup, a couple veggie "meat" balls I found at Costco, ranch dressing for dipping, some cheddar cheese, the last of the chocolate covered heart shaped pretzels, and a red velvet sandwich cookie.

The veggie meatballs are really yummy, though I think The Girl might take some convincing.  And some ranch dressing.  They are corn, peppers, and other veggies - no soy it seems, which I like.  I just want to get more veggies into her.  She gets plenty protein.  Here's hoping that she eats them! 

I did take pictures of the lunch with my phone, but I have no idea how to get them off there.  If I figure it out, there may be pictures coming.

Lunch is half a leftover bean, cheese, and rice burrito (hope it stays warm in the thermos!), a fruit cup, and a red velvet sandwich cookie.

We were just checking in and are so pleased by your excitement. To address a few questions:

We are located in Shelburne and have a VT Dept. of Health inspected production facility in our home, and we are Certified Organic by NOFA.

Our ingredients are grown all around the world (not many certified organic cardamom growers in Vermont), but we blend, grind,and package all of the spices ourselves.

We developed the spice blends to be very easy to use. Whatever you are normally cooking, just leave out the regular spices and add a tablespoon of two of one of these blends (we start with two tablespoons in a family sized meal). We even have a friend who doesn't spice a dish, puts our tins out on the table, and lets everyone spice their own plate! They are easy to experiment with. Try adding a curry blend to burgers or a soup.

With cooking, many of the flavors develop more complexity. For example, with the Vindaloo, a minute of cooking on "dry heat" when you brown the protein ingredient, before adding broth or coconut milk, brings out more flavors. I also love to add onions to many of my dishes, and a browning them really adds to the richness of a sauce.

For crock pot cooking, they should work really well, but our chicken curry recipe only takes about 5 minutes of prep time and 30 minutes on the stove, so it is pretty fast anyway.

Our website has many recipes. You can also order there if you do not have a local store carrying the spices, but we are getting more stores in Vermont and New England all of the time.

Recipe: Strawberry Chocolate Chip Cake Mix Cookies

Another Valentine's Day/Bake sale ready/Super Easy Cake Mix Based cookie recipe for you... this one I had fun with.

Conversation hearts.  They are so hokey.  And I don't want to get into the things they say.  Their evolution into the current phrases from the time I was a child almost saddens me.. but they are cute.

You don't have to top them with anything, but it is fun.  I just pressed the conversation hearts into the cookies after baking.

Strawberry Chocolate Chip Cake Mix Cookies

1 box strawberry cake mix
1 egg
1/4 c water
1/4 c oil
1/2 c chocolate chips (or white chocolate chips)

Preheat oven to 350 F.  Combine cake mix, egg, oil, and water well.

Scoop onto cookie sheets lined with parchment paper or silicone baking sheets.  Bake for 12-15 minutes and cool on wire racks.

Press conversation hearts or other small candies into the cookies before they cool completely, if desired.

Recipe: Red Velvet Sandwich Cookies

This is an easy, festive cookie recipe.  I admit, it's not much from scratch.  It's cake mix.  It's store-bought frosting.  But, it's delicious.  It's quick.  It's perfect for a bake sale.  (This recipe can easily be halved.. you'll just have leftover frosting)

And, it's red.  Nice for Valentine's Day.  On top of this, The Girl has decided that the best cake in the world is Red Velvet cake. It's apparently become very popular in her class from another boy's birthday cupcakes.

You just have to love second grade.


Red Velvet Sandwich Cookies

2 boxes Red Velvet Cake Mix
4 eggs
1 c softened butter

1 container cream cheese frosting

Preheat oven to 350 F.  Combine cake mix, eggs, and butter.

Scoop cookie dough out onto cookie sheets lined with parchment paper or silicone baking sheets.  Bake for 8-10 minutes, then remove from the oven and let cool for 5 minutes before transferring to wire racks to cool completely.

Once cookies are entirely cool, squeeze or spread about a tablespoon of frosting onto half of the cookies, and top with the other cookies to create sandwiches.

Lunch: 2.8.11 - 100th Day of School!

The school makes a big deal about the 100th day.  They have a visit from a masked, caped Super Hero, named Zero the Hero.  He brings donut holes for everyone.  It's pretty cute.

So I try to make the lunch with as many 0's and 1's as possible. 

Snack isn't that creative - mandarin oranges with a cute little heart pick, and a few heart shaped chocolate covered pretzels.  And a juice.

Lunch is a blueberry mini bagel with jelly, baby carrots with ranch dressing, a couple mini corn muffins with cheese, grapes on skewers, and a few nilla wafers.

Lunch is a ham sandwich on pain de mie (in puzzle shape), mandarin oranges in the covered container, grapes, and some parmesan ranch roasted potatoes.

Recipe: Parmesan Ranch Roasted Potatoes

And yet another potato recipe working towards potato conversion!

This one was also delicious!  I can highly recommend it!

(And The Boy is coming around...)


Parmesan Ranch Roasted Potatoes

3 medium potatoes, diced with skin on
1 packet ranch seasoning powder
4 Tbsp olive oil
1/4 c grated parmesan cheese

Preheat oven to 450 F.  In a large plastic baggie, combine potatoes, ranch powder, and olive oil and shake well.  Transfer to a baking pan and roast for 20 minutes.  Stir, and sprinkle with parmesan cheese.  Continue roasting for an additional 10-15 minutes, or until potatoes are cooked through.

Recipe: Skillet Hash Browns

Another potato recipe to convince The Boy that potatoes are delicious.


The Boy liked this more than the other recipes so far!  And, The Girl gobbled them up like crazy... that's a winner!
With a soft boiled egg... mmmmm.


Skillet Hash Browns

3 potatoes, peeled and cubed
1 onion, diced
1/4 c butter
1 tsp Teeny Tiny Spice Company Perfection Spice Rub (or a mixture of salt, pepper, paprika and garlic powder)


Put potatoes in a deep saute pan with enough water to cover them.  Bring to a boil, lower to a simmer, cover, and let cook for about 5-8 minutes, or until potatoes are cooked through.  Drain water and set potatoes aside.

Melt butter in the saute pan.  Add onions and cook until softened.

Add in potatoes and spices and cook for about 5 minutes, stirring occasionally.  Cover and let cook for an additional 5 minutes, until lightly browned.

Serve with ketchup if desired.

Lunch was a mini blueberry bagel with cheese and ham, grapes, half a taco twice baked potato, and a couple homemade chocolate chip cookies.

Recipe: Corn Chowder

I am making all sorts of things with potatoes in them this week because The Boy decided that he doesn't like potatoes and that is not ok with us... enter Potato Week!

Corn Chowder

6 slices of bacon
3 potatoes, peeled and diced
2 stalks celery, diced
1 large onion, diced
1 large carrot, peeled and diced
2 large cans corn, drained
3 c vegetable or chicken broth
3 c water
1 can skim evaporated milk
3 Tbsp flour
Salt and pepper to taste

In a large soup pot, cook bacon until crispy.  Remove and drain on a paper towel.  In the bacon fat in the pan, add onions, carrots, and celery and and cook until softened.

Add potatoes, broth, and water and bring to a boil.  Reduce to a simmer and cook for about 20 minutes, or until potatoes are soft.

Stir in corn, evaporated milk, and flour. Cook for an additional 20 minutes to thicken. 

Using an immersion blender, puree about half  of the soup (or transfer to a blender, carefully puree, and return to pan.)

Serve and enjoy!

Recipe: Vegetarian Taco Spiced Twice Baked Potatoes

This would make a good side dish, or you can serve it as a full meal.  That's what I did.  Super easy and quick!


Vegetarian Taco Spiced Twice Baked Potatoes

6 potatoes, baked (I cooked mine in the microwave)
3 oz neufchatel cream cheese
1/4 c salsa
1/2 c black beans (drained and rinsed)
1/2 c canned corn (drained)
1 Tbsp taco seasoning (or more, to taste)

Shredded Mexican blend cheese, to top

Preheat oven to 400 F.


Halve potatoes lengthwise.  Scoop out the middles, and combine with all other ingredients except for shredded cheese, mashing potato well.

Spoon the filling back into the potato shells, and put in a baking dish.  Top with shredded cheese.

Bake for about 20 minutes, or until cheese is melted.
Serve with extra salsa if desired.
