My, what an interesting and varied collection of ingredients! |
And it did.
I have this Vindaloo spice mix from a local Vermont company, Teeny Tiny Spice Company. They are fantastic.
We have smell testers open at the store I work part time for, and I had to get the Vindaloo, because every time I smelled it, I just wanted to make Indian food! And oh, it's delicious.
I served it with brown rice and some steamed green beans.
Crockpot Sweet & Spiced Chicken
2 frozen boneless skinless chicken breasts (using frozen keeps them moist)
1/3 c grape jelly
2 Tbsp curry powder
1 Tbsp Teeny Tiny Spice Company Vindaloo spice (or use some of your favorite Indian spice mix)
1 tsp cinnamon
1 tsp garlic powder
1 tsp chili powder
1/2 c sour cream (I used fat free)
Combine chicken, grape jelly, and spices in the crockpot. Cover and cook on low for ~8 hours. Shred and let it soak up the sauce. Stir in the sour cream. Serve over rice, noodles, or lentils.
Hi there! Your chicken sounds fabulous - though I never heard of that spice you used :/. Anywho, just wanted to say hi, and that I just found your blog & added it to my rss feeder! Have a great day!
