Recipe: Curry Chicken Drumsticks and Parisian Carrots - Kid Made!

The Girl has been watching Chopped Teen Tournament and Rachael vs. Guy Kids.. plus, she has been showing more interest in cooking overall.  Who am I to say anything against that?

We bought some chicken drumsticks the other day, and some Harvest grain blend from Trader Joe's.  She went to town, and it was absolutely delicious!  The Harvest Grain blend is a mixture of fun grains, including baby garbanzo beans, quinoa, Israeli couscous and other fun things.  You could use rice if you didn't have this grain blend.  She cooked it in chicken broth for extra flavor.  She also used frozen Parisian carrots from
Trader Joe's.  We love those little beauties.  They are heirloom carrots and they grow round!  How could you not love that?  If you can't find them, regular carrots or baby carrots would be absolutely fine.

Curry Chicken Drumsticks and Parisian Carrots

8 chicken drumsticks
1 lb Parisian carrots (or baby carrots)
2 Tbsp Curry powder
1 tsp salt
1/2 tsp salt
2 Tbsp olive oil

Preheat the oven to 475 F.  Place the carrots on the bottom of a 9" x 13" baking pan and toss with olive oil.  Lay the chicken on top and sprinkle with curry powder, salt, and pepper.  Drizzle the chicken with olive oil.  Bake for 40-50 minutes, or until cooked through, flipping the chicken halfway through.  Serve with rice, couscous, or your favorite grains. Add your favorite chutney if desired.
