Recipe: Harvest Grain and Vegetable Salad


I love the Harvest Grain blend from Trader Joe's.  It has Israeli couscous. baby garbanzo beans, red quinoa, and orzo.  It makes a delicious side grain, but I've been wanting to try my hand at a chilled salad made with it.

I have to say, this is a complete hit all around.  I will be making it again.  It would be wonderful in lunches!

Harvest Grain and Vegetable Salad

1 3/4 c vegetable broth*
1 1/4 c Harvest Grains Blend*
1/4 c Italian salad dressing
1 c mixed frozen vegetables (carrots, green beans, corn, and peas)
1 container (6 ounces) crumbled herbed feta cheese

Boil vegetable broth and add the Harvest grain blend, then cover and cook 10 minutes, or until tender. *If you don't have the Harvest grain blend, you can make this salad with Israeli couscous.  In this case, cook the couscous in vegetable broth according to package directions.

When the grains are cooked, rinse it briefly in cold water.  Stir in the salad dressing to coat evenly.  Cook the vegetables either by steaming or cooking in the microwave.  When cooked, rinse them with cold water and add to the grains.  Mix in the feta and chill for least 30 minutes.  Serve cold and enjoy.
