Recipe: Chocolate Applesauce Cake

This was supposed to be brownies, but was definitely more cakey, so I'm not calling it brownies.  That would be misrepresentation.  It is not fudgey at all.  It's delicious, but it's not brownies.

A little piece would be lovely in a lunch.  Or, you could do it in mini cupcakes.  You know I love mini cupcakes and muffins.


Chocolate Applesauce Cake

1/2 c butter
2 (1 oz) squares unsweetened chocolate
1 c sugar
2 eggs
1/2 cup applesauce (I used unsweetened, homemade applesauce)
1 tsp vanilla extract
1 c flour
1/2 tsp baking powder
1/4 tsp baking soda
1/4 teaspoon salt
1 tsp cinnamon
1/4 c flax seed meal (I used beveri flax seed milled with mixed berries)

Preheat oven to 350 F.

Melt chocolate and butter together in the microwave or in a double boiler, stirring occasionally.  Set aside to cool.

In a separate bowl, whisk together sugar, eggs, vanilla, and applesauce.

Add applesauce mixture to chocolate mixture and whisk together.

Stir in remaining ingredients and mix until well incorporated.

Pour into a greased 9"x9" pan.  Bake for 30-35 minutes, or until a knife inserted in the middle comes out clean.

Cool and serve, sprinkled with powdered sugar if desired.

    Keith's birthday is tomorrow, but I decided to make him a 'French toast bread pudding breakfast casserole' type thing - we're having friends over for brunch.
