Recipe: Ham Stuffed Cheddar Corn Mini Muffins

I used some of my King Arthur Flour Vermont Cheddar Cheese Powder in these muffins, but you could throw in some shredded cheddar if you don't have the cheese powder.  It's on sale, though, so if you ever thought of getting it, now's the time! (I am totally making some more cheese crackers before school starts!)

Ham Stuffed Cheddar Corn Mini Muffins

1 1/2 c flour
3/4 c corn meal
2 Tbsp sugar
2 tsp baking powder
1/2 c King Arthur Flour Vermont Cheddar Cheese Powder
1 c milk
1/4 c vegetable oil
1 egg
about 4 slices of deli ham, diced

Preheat oven to 350 F.  Line mini muffin cups with papers.

Combine all ingredients except for ham until well mixed.  Spoon enough batter on the bottom of each cup to cover it, and then sprinkle a couple pieces of ham over the top.

Scoop enough batter on top to cover the ham.

Bake for about 10 minutes, or until a toothpick inserted in the center of a muffin comes out clean.

Makes ~40 mini muffins.

  1. These sound amazing-I am going to make them for our pot luck this weekend at work. I love using or cheddar cheese powder-just sprinkle on steamed veggies. JMD@KAF
