Recipe: Crockpot Sweet & Spiced Chicken

This was a totally made up recipe. The kind of thing that you dig through your cabinet and say "Well, that might work."
My, what an interesting and varied collection of ingredients!

And it did.


I have this Vindaloo spice mix from a local Vermont company, Teeny Tiny Spice Company.  They are fantastic.



We have smell testers open at the store I work part time for, and I had to get the Vindaloo, because every time I smelled it, I just wanted to make Indian food!  And oh, it's delicious.

I served it with brown rice and some steamed green beans.


Crockpot Sweet & Spiced Chicken

2 frozen boneless skinless chicken breasts (using frozen keeps them moist)
1/3 c grape jelly
2 Tbsp curry powder
1 Tbsp Teeny Tiny Spice Company Vindaloo spice (or use some of your favorite Indian spice mix)
1 tsp cinnamon
1 tsp garlic powder
1 tsp chili powder

1/2 c sour cream (I used fat free)

Combine chicken, grape jelly, and spices in the crockpot.  Cover and cook on low for ~8 hours.  Shred and let it soak up the sauce.  Stir in the sour cream.  Serve over rice, noodles, or lentils.
