Recipe: Peanut Noodle Bar

This is a super fun and delicious dinner, and by serving it as a "bar," you can decide what to put in your own noodles.


We had Udon noodles, steamed sugar snap peas, steamed carrot sticks, bean sprouts, a can of "Chinese vegetables" including sprouts, mushrooms, hearts of palm, and water chestnuts, along with Siracha and sweet thai chili sauce.  Mmmmm.
Yes... I had everything...

Here's the recipe for the peanut sauce.


Easy Peanut Sauce

1/2 c water
1/2 c peanut butter
1/3 c low-sodium soy sauce
2 cloves garlic, finely chopped
1 1/2 Tbsp fresh ginger, chopped
3 Tbsp dark sesame oil
2 Tbsp rice vinegar or apple cider vinegar
1 1/2 Tbsp sugar

Combine all ingredients in a blender and blend until well combined.  Serve with udon noodles, thai chili sauce (hot or sweet), and vegetables of choice.
