Wacky Worldy Waffle Wednesday: Pizza Waffles!

Last week, The Hubby had a fantastic idea of making waffles every Wednesday, showcasing different flavors from around the world.

And thus, Wacky Worldly Waffle Wednesday was born!

This is the inaugural Wednesday, and the first waffles I decided to make were Pizza Waffles.


I've seen several incarnations of pizza waffles around the web - one from the Cooking With Trader Joe's: Easy Lunchboxes cookbook, and I really want to make that one!

For Wacky Worldly Waffle Wednesdays, though, I wanted to stick (for now) to actual waffles, sweet or savory, instead of other things cooked in a waffle iron so as to look like waffles.

I found this recipe for Pepperoni Pizza Waffles that I wanted to use as my starting point.

Here's my take on them!

Pizza Waffles

2 eggs
2 c King Arthur Flour white whole wheat flour
4 tsp baking powder
1 Tbsp King Arthur Flour pizza seasoning
1 3/4 skim milk
1/2 c vegetable oil
1/2 c chopped pepperoni
1/2 c grated mozzarella cheese

Pizza sauce
Extra mozzarella cheese

I love this stuff.

I got the good pepperoni.  Used one pouch out of the two.
Whisk up the eggs until frothy, then stir in the flour, baking powder, seasoning, and the liquid ingredients.  When the batter is relatively smooth, fold in the pepperoni and the cheese.

I may have over-filled this just a tidge.
Preheat a waffle iron and cook according to manufacturer's instructions.  Serve with your favorite pizza sauce and an extra sprinkle of cheese.


Or, like The Hubby, top it like a pizza and dig in.
