Recipe: Stuffed Pizza Bread

I made this bread for my post-Holiday party, but it would be wonderful in lunches!

I made my own pizza dough, using this King Arthur Flour Recipe (adding in some oregano, basil, garlic powder, and dehydrated onions).  You could also just buy dough at the store if you prefer.

I made two kinds - one with mini turkey pepperoni and cheese, and one with just cheese for my vegetarian friends.

Very versatile and so much fun!  I used my pasta machine to roll the dough evenly and thinly, but you can use a rolling pin.

Stuffed Pizza Bread

Pizza dough (your favorite recipe or store bought)
Shredded mozzarella cheese
Your favorite pizza toppings (cooled if cooked)
Grated parmesan cheese
olive oil

Preheat oven to 375 F. Spray a pie plate or a large tart pan with cooking spray.

Roll out the dough to about 1/4-inch thickness (I used my pasta machine to do the rolling, but you could do it by hand)

Cut dough into squares about 2" wide. (I used a small biscuit cutter).

Cut the dough into long strips, about 2 inches wide. Cut each strip into squares, about 2 inches across.

Place a small amount of filling in the center of each square (about 1 tablespoon of filling per each square).

Pinch together the corners of each square, taking care to keep all of the filling tucked inside.

Place the rolls in the prepared pie plate or tart pan, working your way from the outside in.

When the pie plate is full, brush olive oil over the top of the rolls, and sprinkle with parmesan cheese.  I added chopped pepperoni to the top of the ones with pepperoni, so we could tell them apart.

Let them rest for 10 minutes to rise a little, and bake for ~20 minutes, or until golden brown.  Serve with marinara sauce for dipping.
