Recipe: King Arthur Flour English Digestive Biscuits

Another King Arthur recipe, and again, another winner for me.

When I was an exchange student in Sweden in high school, I really loved Digestive biscuits.  I had never had them in the states, but they were common in Europe.  They are not too sweet, and there aren't a lot of layers of flavor.  They are kind of a mix between shortbread and cracker.  They are lovely with tea or coffee.  I bet they would make nice little sandwich cookies.

I found a recipe for English Digestive Biscuits on King Arthur Flour's site, and I knew I had to make them.

I bet I could stir some ground flax into them, but for the first go round, I used the King Arthur recipe straight.

I cut them with a small-ish crinkle cut round cookie cutter and used my mini cookie cutters in the middle.

Now I want a cup of tea.

  1. can't wait to try some...hope they are in the next care package...with a fruit roll up and cheddar crackers...oh an maybe some bread and yogurt...and any tea jelly you may have...that last batch was awesome!!! keep experimenting it is fabulous...
