I got a new toy - a twin curl cutter. It's fun, inexpensive, and while it leaves a lot of scraps, it's worth it (now... what to do with a pile of potato scraps?). I love new toys.
What better to make with it than curly fries? Mmmm!
Baked Curly Fries
4-5 potatoes
1 egg white
1 Tbsp your favorite spice mix (I used Teeny Tiny Spice Co's Vadavan)
Cut the potatoes into twists using a twin curl cutter or other spiral cutter. Put in a bowl covered with water. Save scraps for another recipe (also cover with water, so they won't brown).
Bring a large pot of water to boil with a little salt. Put the potatoes in the water and let boil for 3 minutes. Remove promptly and drain in a colander and cool for 5 minutes.
Preheat oven to 400 F. Whisk the egg white up slightly. Put the cooled potatoes in a large ziploc bag and pour the egg white over them, coating evenly. Add spice mix to the bag and toss to coat. Spread the potatoes on a large baking sheet in an even single layer.
Bake for 18-24 minutes, turning halfway through, until lightly browned and cooked through. Enjoy!
