Cooking with Trader Joe's: Easy Lunch Boxes!!

I am proud to be one of the contributors to the Cooking with Trader Joe's: Easy Lunch Boxes cookbook.  Kelly from EasyLunchBoxes wrote a wonderful blog on the cookbook a while back - but basically, a few months ago, Kelly asked our Bento Blogger & Friends group if anyone wanted to contribute recipes to a cookbook.


Along with over 30 of my food/lunch blogger friends, we sent in recipes, and I am proud to say that the book contains a couple of my recipes - and a cool bio page with pictures.  Each recipe is made to go into an EasyLunchbox, and the box is then filled up to make a lovely lunch. 

While each recipes is crafted with ingredients from Trader Joe's, don't think that the cookbook is useless to you if you don't have a Trader Joe's near you.  There isn't a Trader Joe's in my entire state (yet!  There's one in talks... I hope it gets here soon...), and I can't wait to get my hot little hands on a copy.  You can substitute mostly anything with things you find at your local stores, and the recipes.. oh, they look so fantastic.  I've gotten the chance to preview the cookbook and I can't wait to try out some of the recipes from other contributors.

  2. Woohoo!!! I'm so excited for you. I'm preordering now. I've decided this week, after making lunches for my kids all week, and making dinners for only the kids and I with Kolby out of town, that Trader Joe's is the best thing that every happened to me, outside of those kids and that husband.
