The Girl decided that this week, we should celebrate The Hubby's side of the family and make French-Canadian inspired waffles.
Mmmm, poutine.
So, I made potato waffles with Canadian bacon, and topped them with fresh cheddar cheese curds and brown gravy.
Delicious.
The Boy grumbled about the gravy (I was in a hurry and just used a packet mix from McCormick. He didn't like it), but the rest of us gobbled it up. I based my potato waffle recipe on this one., modifying it a bit to suit my needs.
Here's what I came up with.
Potato Waffles with Canadian Bacon
3 large potatoes, peeled and chopped
1 large onion, chopped
3 eggs
~1/4 c flour (or more, depending on the size of your potatoes)
1/2 tsp salt
1/4 tsp ground black pepper
1/4 c diced Canadian bacon
Put the ingredients for the waffles, except the Canadian bacon, in a blender and blend until it forms a batter. Add more flour if needed to reach a good consistency for waffle batter. Stir in the Canadian bacon and cook waffles according to waffle maker directions.
For French-Canadian Poutine Waffles:
