Recipe: Reuben Pasta

In honor of St. Patty's Day, I wanted to make something with corned beef and cabbage (since, while I love corned beef and cabbage, the rest of my family is less sure about it).  My absolute favorite sandwich is a Reuben.  So...

How about Reuben Pasta?

Yum.


Reuben Pasta

1 lb your favorite pasta (I used "Wacky Mac," veggie bow tie pasta)
1 can sauerkraut, drained and rinsed
2 c shredded Swiss cheese
1/2 lb deli corned beef
1/2 c Thousand Island Dressing
Caraway seeds (optional)

Boil pasta according to directions on package.  Drain.

Chop corned beef into strips.  Combine with cheese and sauerkraut.


Toss with pasta and stir in the dressing.  Serve, sprinkled with caraway seeds if desired.
