Recipe: Apple Crumb Mini Muffins

I had some diced and spiced apples leftover from making my mini crumb topped apple pies (because I prepped way too much filling), so I decided to make mini muffins!

Apple Crumb Mini Muffins


2 c diced apples
2 Tbsp sugar
1 Tbsp flour
1 tsp cinnamon
1/2 tsp nutmeg
1/8 tsp ground ginger

1 c whole wheat flour
1 1/4 c all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 egg
1 c buttermilk
1/2 c butter, melted
1 tsp vanilla extract
1 1/2 c packed brown sugar

For the topping:
1/2 cup packed brown sugar
1/3 cup all-purpose flour
1 teaspoon ground cinnamon


In a small bowl, combine the apples with the spices, 2 Tbsp of sugar, and 1 Tbsp flour.  Let sit while preparing the other ingredients.


Preheat the oven to 375 F.  Mix together flours, baking soda, and salt.  Stir in vanilla extract, buttermilk, egg, and brown sugar.  Fold in apples.  Scoop into prepared mini muffin tins (sprayed or lined with papers).


Mix together the topping ingredients, and sprinkle on top of the muffins.  Spray with butter flavored cooking spray to help the crumbs stick.  Bake for 10-12 minutes, or until a toothpick inserted in the center comes out clean.  Cool on wire racks and serve.
