For Rainbow Week, I am taking a page from Gimme Some Oven's book and making smoothies for breakfast. (This one wasn't very substantial, and needed some toast to complete breakfast..)
Today is Red Day, and so I made a Strawberry Watermelon Smoothie. Ok, so it's pink. It was very light and refreshing. It was a thinner smoothie. You could make it thicker by freezing either chunks of watermelon or the strawberries. If you don't have fresh strawberries, you could use frozen.
Strawberry Watermelon Smoothie
(Serves 2)
1 c watermelon chunks
8-10 strawberries
1/2 c plain greek yogurt
1/4 c skim milk
1/2 tsp ground ginger
Combine ingredients in a blender (or use an immersion blender) and blend until smooth. Pour into two glasses and enjoy.
I could go for one of these right about now. I'm so ready for watermelon - it's been in the 90s around here :/
