Recipe: Roasted Cauliflower

I made this with orange cauliflower, for Rainbow Week.  You could use any cauliflower, and any spices, really.  I whipped out the Teeny Tiny Spice Company Vindaloo for the cause, and ... mmmmm!
Look at this glorious orange cauliflower!

Roasted Cauliflower

1 head cauliflower
1 Tbsp olive oil
1 Tbsp Teeny Tiny Spice Company Vindaloo (or other favorite spices)

Preheat oven to 425 F.  Cut florets off of the cauliflower, and toss together with olive oil and spices in a baking dish.  Roast for 15-20 minutes until lightly caramelized, and enjoy.
