Another Rainbow Week smoothie, inspired by Gimme Some Oven's Smoothie Week, using the fruit I have on hand.
I found a lemon plum at the store and had to get it. I've never seen one before. Neat!
You could use a regular plum if no lemon plums are to be had. It wouldn't change the color appreciably.
Here's our Yellow & Orange Day smoothie!
Pineapple Banana Orange Smoothie
1 c pineapple chunks in juice (or fresh pineapple)
1 lemon plum, stone removed and cut into chunks
1 banana
1/2 c orange juice
1/2 c Greek style yogurt
Combine all ingredients in a blender (or use an immersion blender) and blend until smooth. Enjoy!
