Recipe: Kale Chips

Kale chips have been around for quite a while.  I'm not doing anything new here.  But please, if you haven't tried them, do!  They are simple, quick, and oh so healthy.

And perfect for Green Day during Rainbow Week!

The last time I made them, I ate an entire bunch of kale all by myself.  In one sitting.  Yum.


Kale Chips

~3 c kale
cooking spray or 1 Tbsp olive oil
salt

Preheat oven to 350 F.  Remove kale from thick stems and separate into leaves.  Pat dry with a paper towel.  This will make the kale chips crispy instead of soggy.
All coated

Put into a large roasting pan in a single layer.  Spray with cooking spray, or drizzle with olive oil and rub lightly to coat evenly.  Sprinkle with salt lightly.

Bake for 10-14 minutes, stirring once or twice (I shook the pan).  Remove when kale is crispy, but not burnt.  Enjoy!

  2. these are so yummy. I recently made some and put nutritional yeast on them for a "cheesy" flavor with a little lemon juice too
