Recipe: Cinnamon Roll Cookies

I got this recipe over at Picky Palate, and holy cow, they are delicious!  My co-workers at Kiss the Cook told me that they were in the top 5 favorite treats I've brought in.

They are delicious, and easy.

Healthy?  Well... they are a treat, let's just say.

Use your favorite roll out sugar cookie recipe.  I admit, I totally cheated and used a mix.  I was in a hurry.  Don't judge me.

Preheat oven to 375 F.  Roll your cookie dough out into a long rectangle on some parchment paper.  I cut the edges with my spatula to get the rectangle nice and even.  Spread the rectangle with a little softened butter (I used a couple tablespoons).


Sprinkle liberally with cinnamon.  Top with about a quarter cup of brown sugar, and spread evenly.

Roll up the rectangle like your would a cinnamon roll.  Slice evenly into cookies about 1/4" thick.  Place about 2" apart from each other on cookie sheets lined with silicone baking sheets or parchment paper.

Bake for about 10 minutes or until lightly browned.  Cool for a couple of minutes on the cookie sheets, then transfer to wire racks until completely cool.  Enjoy!

Picky Palate drizzled them with some cream cheese frosting.  I didn't find that necessary at all.  Delicious without.
