Recipe: Sticky Spicy & Sweet Drumsticks

I had a bunch of drumsticks in the freezer from a while back when they were 59 cents a pound.  This recipe is a great way to use some of them!


Sticky Spicy & Sweet Drumsticks

2 Tbsp olive oil
1 Tbsp Teeny Tiny Spice Co. Perfection Spice Blend (or your favorite spice blend - Chinese 5 Spice would be great)
6 chicken drumsticks

3/4 c hoisin sauce
1/4 c sweet Asian chile sauce or hot pepper jelly
1/4 c unseasoned rice vinegar
1/4 c chicken stock or broth
2 Tbsp minced fresh ginger
1 tsp garlic powder
1 tsp toasted sesame oil
2 Tbsp honey

Preheat the oven to 425°.

Remove the skin from the drumsticks. Put the oil in a large ziploc bag, Add the chicken coat with the oil.  Sprinkle with the spice mix and roll around in the bag to coat.

Arrange the chicken on a rack over a roasting pan (ideally foil lined) Roast for about 35 minutes, turning twice, until cooked.

While the chicken is cooking, combine remaining ingredients in a blender and puree until very smooth. Transfer to a saucepan and simmer to reduce until thickened, about 5-10 minutes.


When the chicken is cooked, transfer to a bowl and toss with the sauce, until completely coated.
No pictures of the broiling, but isn't this lovely?
Preheat the broiler and position a rack 8 inches from the heat. Put the chicken back on the rack in the roasting pan and broil for about 10 minutes, brushing with the sauce and turning occasionally, until glazed and sticky.  Enjoy!
