Recipe: Taco Spiced Chicken Quesadillas

I had a rotisserie chicken from Costco leftover from dinner the other night, and I decided to use it in these delicious quesadillas. 


Taco Spiced Chicken Quesadillas

~2 c cooked chicken, shredded (I used rotisserie chicken)
2 Tbsp taco seasoning (or more or less, to taste)
1/4 c taco sauce
shredded Mexican cheese
Whole wheat tortillas (I used 6)

Combine the chicken with the taco seasoning and the taco sauce.  Spread some of the chicken evenly on a whole wheat tortillas and top with cheese.  Put a second tortillas on top, and cook in a skillet on medium-high heat until browned.  Flip the quesadilla carefully and cook on the other side until it is also browned.  Repeat with more tortillas until the chicken is used up.

Cut into wedges and serve.  They would be lovely with guacamole, sour cream, and/or salsa.  They are also delicious plain.  Enjoy!
